I love the phrase 'stunt heat'. I love spicy *flavors* but once it's hot for the sake of hot but sacrificing flavor I'm going to pass.
21:33 years ago, I learned from a Hatch Chile farmer that the relative heat of a chile can fluctuate, depending upon the water resources available to the chile. Like: in a drought year, they will be hotter; in a year of heavy rains, they will be more mild.
Well yeah the plant can build more robust cells with cellulose etc if it has water. Capsaicin is in the seeds, and plants always prioritize seed production before energy harnessing.
Chilies, corn, potatoes, tomatoes, cassava and sweet potatoes, plus tobacco were all things that didn't exist outside or North and South America before the Columbian exchange. A lot of classic "traditional" foods that use these ingredients are less than 400 to 500 years old.
Many people get upset about this without understanding this.

I love the way Nicole said, "I didn't realize food was a thing." I know exactly what she means. I didn't know until I went to culinary school and my mind was blown. I just want to keep learning.
Half inch or so cubes of cheddar cheese soaked in hot sauce is a pretty good way to enjoy and taste various hot sauces
I put five types of crushed pepper flakes (Jalapeño, Urfa Biber, Arbol, Ghost & Habanero) along with chunky Jif peanut butter and a good spoonful of raw honey in my oatmeal. I love it so much that just anticipating it the night before I have it makes me happy. My husband of 40+ years just has butter, and brown sugar in his oatmeal but he ❤ totally supports my weirdness.

Savory oatmeal is criminally ignored and maligned. I absolutely love some oatmeal with beef soup base, Montreal steak seasoning, and dehydrated onion. Cheap, filling, and tastes great. Gruel is gruel. There is no logical reason that it has to be sweeter than a dessert.
Peanut butter and spices added to carbs is an essential food group for me. I also make my own ice cream with those flavors.
I gotta try that now 👀
I love hearing this podcast because I'm frequently reminded about what a great interviewer Josh is. The way he explained everything about spice and chiles and trade routes and evolution of cuisine and then transitioned to introducing the (probably the next topic they had in the outline for the program) stuff about capsaicin was flawless
I grew up spreading mayo on bread and dipping it into my canned soups as a kid which is something my grandma had us do. Wonder if that is from the great depression?
Hugely relate to what Nicole said about Pepper. My dad is allergic to garlic so I rarely had it growing up, and now I put it in everything

Im Polish American so i didnt grow up eating any spicy foods. The only spicy things that we have are spicy mustard and horseradish. After i became an adult i started eating Mexican food and semi spicy meals. In my 40s i recently started eating and liking Indian food, as long as its not too spicy.

Something is absolutely happening with jalapenos, I got some from Aldi and they tasted exactly like green bell peppers. I also haven't encountered a slightly spicy tasting broccoli in years. My favorite thing is my homemade fermented hot sauce

Nicole's table has no less than 3 hot sauces on it at any time. My friends mess with me b/c I travel with a minimum of 3 in my truck at any time. Always be prepared for bland food.
I have like 4 different generic dry spices at work for food. Cheap food becomes so much better if you just add a couple of spices

Loved the episode--as someone who loves: cultivating, looking at, drying, canning, fermenting, cooking with, and eating the beautiful fruiting bodies of the variety of Capsicum plants. I especially love the spicy peppers. I know "toxic masculinity" can be associated with those that desire the spiciest food to "show off" etc, but my world is very much NOT that. Most that I know are flamboyant and poetic weirdos who happen to like being brought to their knees every so often by a gorgeous weaponized pepper.
For jalapeños you have to let their soil dry and not water them often because the capsaicin comes from a defense mechanism. Makes me wonder if the jalapeños are getting blander because they’re watering them more for quantity of jalapeños vs quality.
I'm not watching anymore of this channel until you two watch the original Jurassic Park and report back

Except that was a Dilophosaurus that killed Nedry, not a velociraptor in the original Jurrasic Park. =P As far as spicy foods, I couldn't eat them when younger. I took a lot of medicine for health issues growing up and it was already causing ulcer issues at 15. Best thing I did was stop taking those meds. BUT, now I can eat spicy foods and love it. I have found stuff like adobo sauce and chipotle to be my favorite for that deep, smoky and spicy flavor.
I have a special hatred for the one chip challenges and such. I used to work in a chip factory and the seasoning gets in the air. You're working on Cheetos and you just have a cheesy taste in the air, you work with comically spicy chips and people go to the hospital because they have chemical burns from the capsaicin in the air

I, too, am siding with St. Louis style pizza "just a saltine cracker!" with beer drinking over a fluffy classic Italian regional pizza or style. I can just tell I am going to enjoy using the cracker pie as a conveyer for the toppings, while drunk, and see myself being so glad I am not weighing myself with heavy, sleep-inducing dough.

I would and have eaten super spicy foods, but only if they also taste good. There is a balance of heat and taste. Like the hot ones sauces, I got the package that Sam’s Club had a while back and I legit love the Apollo last dab sauce and the rest of the sauces. Super spicy and also tastes great.

Texas Red Chili, Chile Relleno, Chilli Con Carne, there's no wrong way to say chili. But the one with one "L" and two "I"s tends to be a bowl of meat stew, based on the dish created in San Antonio, Texas, the one with an "E" at the end tends to be dried or otherwise singular varieties of pepper, and as far as I know, 2 "L"s just means not from the southern border of the US.

In a food sense stunt heat makes no sense I agree but from an experience perspective I can see people doing it for just the experience and think that is fine. We all do so much stuff just because we want shared experiences.
Its just annoying online the stunt aspect is more interesting then spicy for taste sake that is dominatea the conversation at times
