    My 89 year old mother was raised Mennonite in Manitoba, Canada. I remember her canning when I was very young; however, she never taught me. I taught myself 40 years ago when I was in my 20s. Yesterday I invited her and my youngest sister, who has never canned to come over and do some canning. Before we made my Grandma Plett’s Sweet Pickle recipe as well as your Pineapple Zucchini recipe, we sat down and watched this video together. My sister’s name is RuthAnn. My mother is the oldest, but the oldest brother’s name is Alvin. This video meant a lot to us as it brought back wonderful memories. Thank you for sharing your life with us!

    I believe the philosophy that playing only is the work of children has contributed so much to the mental health issues, including narcissistic tendencies we are seeing today. A person feels more valued when they actually are a needed part of their family and community. Children are no different.

      I also love your channel. It is a long time since I baked as you do. I love ❤️ the ‘Bread_Sticks’ you’ve shown all of us how to do. I used to make bread twice a week. Just the husband & myself (with a newborn). I live in Queensland, Australia. The property we were on was about 120 miles from nearest town. We lived quite a few miles west of a ‘Railway Siding’ it’s a bit of a town today, Nebo. Not to be confused with a Mt Nebo - that is on the outskirts of Brisbane- our State Capital. No Nebo was and I think still is about 14 hrs drive north of BNE. There was a small shop in Nebo but the shop owner was greedy for every thing she could be, example : the Mail would come through Nebo in late arvo. Too late for people to dash in and collect goods. I’m not real sure but I think Mail would arrive after shop shut. The shop would charge 10c per loaf to store it till morning. I had a GOOD cook book. I got a drum of Bakers flour + yeast. We had some ‘ROUGH’ bread - no matter how GREEN IT STILL fills the tummy. A few weeks later we were eating fairly ‘choice’ bread. That newborn is 50 next year. This was a cattle/grain property. We had a house supplied (we found an old vegie patch - it had a windmill + pipes to water so we grew most veggies and enjoyed a simple life. Never thought of preserving veggies- we ate them all. Anyway, I’ll continue your lovely UA-cam.

    I make it with shredded zucchini. It works perfectly in any recipe calling for crushed pineapple.

    I MADE THIS!!! Thank you for sharing your process for canning pineapple zucchini and the cake recipe. I had no idea this is my aunt's favorite kind of cake. And I have so much zucchini this year! My husband loved pineapple on cottage cheese. I did 15 pints yesterday and baked the cake today. It was AMAZING!

    Thanks for sharing your recipe for turning zucchini into pineapple pieces. I like to substitute 50% or more grated zucchini in carrot cakes. Extra green veggies and no one notices the difference.

    I so enjoy your weekly video but it ends to soon 😊Living in TX we run our a/c all summer and I often wonder how my maternal grandparents raised 12 kids with no electricity, running water and only a wood cook stove to cook on all year round! They raised cotton and sorghum so we’re in the heat all the time. How times have changed.

    You're doing an amazing job with your kiddos. They don't appear to have to be asked to do anything. Wonderful!! My 2 boys were fun and learned a lot once we moved to the country.
    Now, I love zucchini, but I 🥒 🥒 never would have thought about making pineapple 🍍 🍍 from it. Yum!!!

    This is a great idea. Pineapples in Australia can be a little expensive when your canning in bulk for the pantry but zucchinis are super cheap... I will have to try this on pizza 😀

    When I was 5 years old it was my job to feed our chickens. It didn't hurt me one bit!

    Good morning RuthAnn and sweet family! I have heard of taking zucchini and making pineapple zucchini and now I have the recipe. Your pineapple upside down cake looked delicious. I’ve always made mine in a cast iron skillet, but that’s how my grandmother and mother did it....we learn from what’s passed down and I guess that’s what we get used too.

      Hey there. I live off-grid with no oven, so, like you, I tend to use pans on top of the oven, which seems to work well for some things. I was going to try a bain marie method that I use, for this recipe. Have you tried it? I think it'll work well for this type of cake which tends to be very moist, so the extra steam moisture shouldn't ruin it.

    I had no idea that zucchini would take on the taste of what it is cooked with.     Hi Ruth Ann. Potato bugs are very bad in our area of Canada. I was listening to a gardening program and it was suggested to plant marigolds in between each potato plant or plant an onion in each hill of potatoes.

    I laughed right out loud when I saw you measuring the lemon juice. That is so like me in the kitchen. I wish we were neighbours as I know we could be great friends. I love the twinkle in your eyes. I will try this recipe this year but I will not tell anyone that it is zucchini as then they would not try it. :)

      My old bottle of lemon juice doesn't have the plastic insert that's causing the splashing. You could take it out and splash less by just pouring.

    Thank you, we love zucchini and I'm always looking for new ways to use it. I plant a lot of zucchini because it has gotten so expensive in my area, it cost over a dollar for one skinny little zucchini.

    Love you’re recipes. I always sauté sliced zucchini with olive oil fresh summer tomatoes onions and oregano parsley garlic as a side dish or over pasta .

    I love to use pineapple and apricots for jam. It's my favorite jam. Apricots, peaches and zucchini take on other flavors. cherry/peach and blueberry/apricot is wonderful too.

    Thank you. That was really good and different. I will make sure my granddaughter does some structured work, cooking, chores before we play outside. I have always done this with her already but so nice to hear from you the merits of doing this. She turned 3 and I have her starting a 2x2 foot garden, putting peanut butter and jelly on bread and cutting a banana with 2 hands with a butter knife. Her Mom didn't say anything but I hope to set an example for her as well. Thank you.
