What does the "tolerance" function in the stock plugin actually do? Is it equivalent to the "straighten curve" function in VariAudio?
I have the same question about the "speed" function as well -- is it the same as the "correct pitch" function in VariAudio?

For the speed function in this plugin: this is more like straighten curve in vari audio.
For Tolerance, Steinberg says this: "Determines the sensitivity of analysis. A low Tolerance value lets Pitch Correct find pitch changes quickly. If the Tolerance value is high, pitch variations in the audio (for example, vibrato) are not immediately interpreted as note changes." so it is not like "straighten curve" as I understand it, it is more like "how much fluctuation do i allow the audio to have before I act"

Is there a function to fix an out of tune note on the instrument?

If the instrument is playing singular notes: yes, use vari audio
If it's a polyphonic instrument (guitar or piano etc) and multiple notes are audible: you can use melodine pro i think
Melodine is not included in cubase pro but you can buy and install it later
