- I was learning some Saraswat Goan recipes and decided to experiment. There's still a lot to discover in the realm of Goan cooking and I'm glad I get to document it on this channel. I hope you give this recipe a try. It's healthy and satisfying and also to some of us, something new!
Dev Borem Korum Ani Mog Asum ❤️
Ingredients:
(1 US Cup = 240 ml)
For the Curry Paste:
1 Tablespoon Oil
4 Cloves
4 Black Peppercorns
1/2" Cinnamon
1 Tablespoon Coriander Seeds
4 Red Chillies (Kashmiri, for colour)
1 medium-sized Onion, sliced
4 Garlic cloves
1 Cup fresh, grated Coconut
1/2 teaspoon Turmeric Powder
Water for grinding
For the Curry:
1 large Onion, chopped
1 Tomato, chopped
The above Curry Paste
Approximately 1 & 1/2 Cups Water
Salt (keep in mind the eggs)
1/2 teaspoon Sugar
4 Eggs
Coriander leaves for garnish

Looks mouthwateringly delicious - I’m positive that this is how my Mother made Thantiachi Kodi. 2 Questions: 1. To prevent the eggs from becoming rubbery, would it be advisable to see that the curry is well cooked before introducing the eggs? And 2. Why sugar?

Reminds me of shakshuka,the way the eggs are cracked into the curry.
I went and looked it up since you mentioned :) I agree, this egg curry resembles the Shakshouka (I must try the latter some time)

HOW VERY PEACEFUL 🌸
My mouth is drooling
GOAN EGG CURRY
4 eggs
Curry Paste -
1 Tbsp Oil, heat
4 black peppercorns
4 cloves
1/2" Cinnamon
1 tbsp Coriander seeds
4 red chillies dried
Fry till aromatic
1 Onion, medium sliced
4 Garlic cloves
Fry till onion is golden brown
1 cup Coconut, fresh grated
Roast till brown and cool,
Add 1/2 tbp turmeric
Grind with little water into a smooth paste
2 tbsp Oil, heat
1 Onion, large, chopped
1 Tomato, medium, chopped
Fry till tomato softens,
Add spice paste
Pour 1 or 1 and 1/2 cup Water to get semi thick consistency
1/2 tsp Salt
1/2 tbsp Sugar, optional
Boil on low heat
Crack Eggs 1 by 1 and gently leave in the curry
Cover and simmer on low heat
Cook for 10 minutes
Garnish with fresh green coriander leaves, finely chopped
Serve with Steamed Rice

I didn't use fresh coconut .instead I used shredded coconut which blv get in Australia
So my curry didn't come out tasty as yours..
