Spicy Egg Curry | Anda Curry

  • A Spicy and tangy Egg curry that pairs with anything!
    Who doesn’t like a good Anda Curry? I usually like to make this gravy on the thicker side, but you can adjust it as you like; adjust the heat as you prefer.

    Ingredients:
    5 Boiled Eggs (You can add a couple more, or reduce)
    1 Tablespoon Salted Butter
    Pepper powder
    For the Curry paste:
    1” Ginger
    5 - 6 Garlic cloves
    2 Green Chilies (I used spicy ones)
    2 Large Tomatoes
    Handful of Fresh Coriander
    4 Kashmiri dried Red Chilies
    1 teaspoon Coriander powder
    1/4 teaspoon Turmeric powder
    While cooking the curry:
    3-4 Tablespoons Oil
    6 Peppercorns
    6 Cloves
    1/2” Cinnamon
    2 Green Cardamoms (or even 1 is enough)
    2 Large onions, finely chopped
    The curry paste
    Water, to adjust consistency ( 1 & 1/2 cups)
    Salt, as required
    1 teaspoon Garam Masala powder
    1/2 teaspoon Bhuna Jeera powder (roasted jeera powder)
    1 teaspoon Kasoori methi
    1 teaspoon Sugar
    Fresh coriander for garnish
