The Ultimate Juicy Mushroom Burger | Struggle Meals

- Get your daily dose of 'shrooms in with this juicy veggie burger! Frankie Celenza (@frankiecooks) explains how mushrooms are an excellent meat substitute both in flavor and in cost.
MUSHROOM BURGER
Yield: 4 burgers
Prep Time: 20 minutes
Cook Time: 20 minutes
Ingredients:
3 butter pats
1 tablespoon vegetable oil
1 1/2 pounds baby bella mushrooms, finely chopped
2 cloves garlic, minced
1 1/2 cups cooked and cooled rice
1/2 cup Parmesan cheese
1/2 cup breadcrumbs
1 egg, beaten
1/4 cup chopped parsley leaves
1 1/2 teaspoons kosher salt
1/2 teaspoon black pepper
4 slices Swiss cheese
Salt and pepper
4 brioche buns, toasted
1 large tomato, sliced
4 lettuce leaves
Mustard
Steps:
1. Heat a large skillet over medium heat. Add the butter pats and oil. When the butter has melted, stir in the mushrooms and garlic and season with salt and pepper. Cook for 12 to 15 minutes, until all of the liquid evaporates. Set aside to cool.
2. In a medium sized bowl, mix together the parsley, egg, breadcrumbs, rice and cheese. Stir in mushrooms and mix until well combined. Form into 4 patties and place in the refrigerator for 30 minutes.
3. Cook in a skillet for 8 minutes per side, or until golden and crisp, pressing down gently with a spatula as they cook.
4. To assemble: Place a burger on each toasted bun with a slice of tomato, lettuce and mustard.

Thanks Frankie! You're always coming up with the best meals. As a student and trying to be cheap healthy it's great. I've tried plant based burgers before and they weren't very good plus the calories.

Just made these. I loved the mushroom mix. I had a hard time not picking at it as it rapid cooled. I added 1 tea onion powder + 1/2 garlic powder (I was out of fresh garlic). So good! I can easily see me making this mushroom mix and adding to my homemade turkey burgers to make the batch go further in the summers. Win-win. :-) TY, Frankie!

Hi Frankie!!! Love your recipe. I am not against using eggs as a binder but I always have chia seeds and flax seeds in my cubboard. So I used them instead and, FYI, it came out great! Thanks again!

If you have enough cash for a splurge meal, there's a recipe on...Avant Garde Vegan, I think it's called? It's a mushroom burrito where you slice up a few kinds of mushrooms, grill the hell out of them, and I'll confess to you that I am not vegan so I used regular tortillas and sour cream.

It's a fake kitchen. Other than the working stove, there is nothing there that's real, just cardboard and plastic props to make it look like some sort of kitchen.

This is one of the best recipes out there ofcourse I added more seasoning just bcoz I'm indian..I added mint,cilantro, Italian seasoning,lots of green chillies,green onion,ginger powder,garlic powder,white pepper powder, roasted jeera powder,fennel seeds, coriander powder, barbecue sauce etc 😂 it was fantastic,I did not miss meat at all

nice recipe! thank you :) I have a question. why did you put the mushrooms in this early (and wet) stage to the rest of the ingredients. if you browned them longer, wouldn't they have tasted more meaty and earthy?

I tried it. Step by step. The overall taste was good. But we recommend mashing the rice. It didn't look good with whole rice pieces despite that we tried cooking sticky overcooked rice to ensure it holds well. I would also prefer to reduce the rice quantity 1.5 cups seemed a lot. Will give teh recipe one more try..

Protip: Tofu is a great binder, adds protein and it's not expensive. $1.5/lb and you only need about half. Squeeze out as much water as you can, and add a little bit of flour or corn starch. Skip the egg and the rice.

12 cents worth. A big bunch can be had for about a dollar.
Can't get cremini here, but mushrooms are a great meat substitute and so much cheaper. Meat tends to be the most expensive part of any budget. Eating less helps the pocket and our health.

Love everything about this recipe - however, I'm OCD about the layering - mustard and ketchup (maybe a pickle) on the bottom bun, burger, then lettuce and tomato, THEN mayo (or a mayo based burger sauce) then top bun - mayo goes with the lettuce and tomato, mustard/ketchup next to the burger - I cannot violate these rules when assembling a burger but hey...........

In my country.. that kind of mushroom is more expensive than meat. We have oyster mushroom that is cheaper but less tasty.
You could always flavor the chopped oyter mushrooms. Fun fact, oyster mushrooms are practically the best mushrooms to imitate meat texture. At least from my experience 😂 The cheapest mushrooms we have are buttons mushrooms which kinda suck honestly 😂 literally only good on toast with white sauce that has tons of black pepper on it
I don’t know where he getting eggs for $0.12 each. A dozen eggs in Florida is about to $3 plus tax not $1.44. Maybe if you bought eggs in bulk and got the lowest of the low quality maybe, just maybe you could get to a lower price but I know I could eat that many of the poor quality bulk eggs and would waste them anyways.
Egg prices vary all over the country. $3/dozen where I live is for organic free range, or farm raised organic. Regular grocery store eggs are around Frankie's price in central PA.
A dozen eggs is $1.08 here in Ohio
Aldi, for one.
Definitely depends where you live. I typically don't spend more than $1.25 on a dozen. I just got some yesterday from Walmart for $0.99 but a couple weeks ago they were only $0.79 a dozen.
Give Aldi a try. I live in one of the highest cost of living states and regular eggs were $1.08 a dozen at Aldi yesterday. You're looking at about $2 for cage free and around $3 got free range.
