    How to make Soto Ayam Indonesian Chicken Soup (Video Tutorial)
    Soto Ayam - Indonesia’s Chicken Soup with vermicelli noodles is delicious, light on the stomach and easy to prepare.
    Step 1-add a tablespoon of oil to a cooking pot and add shallots, ginger, garlic, candlenuts and turmeric. Saute for around 2 minutes and transfer to a plate to cool. Grind the ingredients into a fine paste. Add back the ground paste into the same cooking pot and saute for a while. Then add the dry whole and ground spices (cumin, coriander, star anise, cinnamon) and saute for a while until the species blend well with the paste and loses its raw flavor.
    Next, add the chicken pieces and the aromatics-lemongrass and kefir lime leaves. Saute for a min and then add coconut milk followed by water. Season with salt and sugar and let the Soto Ayam -Indonesian Chicken Soup simmer.
    After around 25-30 min, the chicken pieces should be tender. Fish them out and let the chicken pieces cook for some time. Turn the flame down and let the Soto Ayam stay warm till you serve.
    Step 2: Shallow fry the chicken pieces until they are light brown. Transfer to a plate and let the chicken cool. Shred the chicken prices and discard bones. Set it aside.
    Step 3: Prepare the rice vermicelli.
    Step 4: Using a deep plate or a soup bowl assemble the rice vermicelli, shredded chicken, half a boiled egg, wedge of tomato and lime. Pour over the sunshine yellow broth over all the goodies. You can garnish Soto Ayam with the following combination: Scallions and Sambal or Cilantro and chilli oil. Fried, crispy onion is also highly recommended.

    Ingredients for Soto Ayam
    600gm Chicken with bones
    4 Shallots
    8 Garlic Pods
    1 thumb-size Ginger
    Fresh Turmeric (thumb size) or ½ tsp Ground Turmeric
    2 Green Chili or cracked Black Pepper
    5 Candlenuts
    5-7 Lime Kaffir Leaves
    3 Lemongrass Stalks
    1 Cinnamon Stick
    2 Star Anise
    1 tsp Ground Cumin
    1 tsp Ground Coriander
    1 cup Coconut Milk
    1 lt Water
    1 tsp Sugar
    Salt to taste
    Serving
    Rice Vermicelli Noodles
    Tomato Wedges
    Cilantro or Scallions (garnish).
    Lime Wedges
    Crispy Fried Shallots
    Boiled Egg
    Sambal
    Cracked Pepper

    As an Indonesian, I approved this. Authentic as far as it gets considering you are in Toronto. Next time please consider putting perkedel (fried mashed potatoes), kerupuk udang (prawn crackers) and kecap manis (sweet soy sauce) as the condiments.

      Beautiful, and authentic. Yes I agree. Perkedel, mashed potato, rounded, braided and fried, will complement this soup even better. Chopped asian celery /indonesian parsley would add an extra "zing" to the dish. In my father's birthplace in South Kalimantan/Borneo, soto is eaten with sliced ketupat (rice cake in woven coconut leaves). Also, in many provinces, santan or coconut milk is omitted. Steamed vegetables such as nicely cut (into stripes) cabbage, sliced tomato or bean sprout are used extensively

    Indonesia is an archipelago country with hundreds of ethnicities. Chicken soup itself is chicken soup originating from Indonesia. every ethnicity has its own chicken soup recipe. some use coconut milk, some use broth, some add potatoes.

    I think cummins, cinnamon and star anise are mostly included in beef soto rather than chicken soto. Chicken soto mostly got clear broth. But there are varieties of soto anyway, depending on which regions. Coconut milk is optional. Your recipe is kind of Sumatera style soto ayam.

    RAWON is a beef soup with black broth. An original dish is from East Java, Indonesia.

    You should adding some bean sprout on top the soto. Bean sprout can't separate from the soto.

    why do you use coconut milk in Soto ayam? I think that Soto Ayam is Indonesian Chicken soup and doesn't have coconut milk in it

      There are definitely different variations of Soto Ayam. I use coconut milk in this recipe with water as it gives the soup a slightly thicker texture, which I prefer. Please do try it and share with me how you like to make your Soto Ayam 😊.

    I have never ever ever ever had Soto Ayam with Coconut Milk. That is a different dish called Opor Ayam. (Indonesian Chicken Curry)

      Thank you for watching and for your comment 💛 There are upto 75 unique (recorded) versions of Soto Ayam cooked by diverse Indonesian ethnicities and cultures all across the archipelago. I understand this version of Soto Ayam may seem very close to Opor Ayam due to the use of Coconut milk but I acknowledge this isn’t the only version of Soto Ayam. Also Opor Ayam are of 2 types; one with turmeric (Opor Kuning) and one without. Do let me know which version of Opor due to like more? 😊

    Soto medan is indonesian soto whit coconut milk.

      @@chandraferdian2872 its still soto ayam, the soto ayam you mentioned might be soto ayam from Lamongan. In Medan people call it soto, people in lamongan call their version as soto as well. But since we have many different varieties of soto we tend to add the region name into the dish name, just to distinguish it. Soto medan is still soto ayam if they use chicken 🤷🏼‍♀️🤷🏼‍♀️🤷🏼‍♀️ she never specified from which region this soto recipe is from.
