I have to share! I was in the grocery store this morning and a regular size can of red beans was $3.29! Even if I'd won the lottery, needed beans and $3.29 per can was all that was available - I'd do without. I love my home canned dried beans.

Corn and black bean salad has been one of my favorite foods for many years. I look forward to trying the black bean tostadas! Black beans are my favorite beans to can and form the basis of many of my “fast food” meals. Of course this salad is one of them! Corn is a better food than most realize. It has a mega dose of the vitamins needed to help prevent macular degeneration! Lutein and Zeaxanthin are carotenoids which are abundant in yellow corn! White corn has much less.
Your corn & black bean salad is almost a Texas Caviar. We also add diced avocado, 1 diced jalapeños, diced garlic, cilantro, 1 diced cucumber (seeds removed) and lime juice. This is served as a salsa, side dish, we love it on grilled hotdogs. This is so versatile. lime wedges on the side.
That sounds great! I have problems with jalapenos, they tear my stomach-up. So, we substitute them with other peppers or spices. Thanks for your comments and watching our videos. Jim

Try Brazilian Feijoada (it's a Brazilian Black Bean Soup) next time you feel like having black beans, if you never tried it, very easy on a pressure cooker / instant pot (you can use lean pork and/or beef instead of fatty cuts, same with the sausage, I like to make mine with pork loin and lean smoked sausage). Remember to have some "cachaça" (it's a distilled drink made from fermented molasses) on your chosen recipe as it adds a nice depth of flavor to it if you can. You just need some white rice and some "farofa" with it. Perhaps a salad of your choice. Let's know if you try it. 🙂 You look more rested. Spring is coming. Enjoy!
Even with following your directions, I can't find the black beans handout. Has it been posted? I'm enjoying this series on Marvelous Beans as in all of my years of cooking, I've never used dried beans. I use store bought canned beans all of the time. My next thing to learn how to can is beans following your excellent teaching. Because of your channel I've learned so much about canning. Right now I'm using my Nesco electric pressure canner to make chicken bone broth from a rotisserie chicken carcass. I have yet to use a stove top canner. I have a small Mirro 12 quart pressure canner that I've had for years, but I haven't used it very much, its just easier to use the Nesco.
I have about 5 lb of dried black beans right now, because they were on clearance at the grocery store for $3!!! Couldn’t pass that up. 😂 Will definitely be trying both these recipes.
I’m not the biggest fan of beans or peas but I think I know what I will be having for lunch and dinner on the weekend. I’ve never had either dish, the tostadas looks easy enough, even for me and I love salads of all sorts. It’ll have to be with canned beans though as I don’t have any dried beans on hand. Looks good. I have another version for your salad, that I make. I also use diced cucumber and my dressing that I do is Good Seasons Zesty Italian Dressing mix. This is the Dry packet stuff. You just sprinkle it into the salad and mix, then I also added a couple tablespoons of mild banana pepper juice, and some of the pepper rings also. If you like heat of course your choice of peppers and juice. I keep extra of the mix on hand, to add a little more if needed at serving time. It can soak in some if sets for a while in the fridge. Fresh on and served like in 10 to 15 min. Makes it pop in flavor more. I don't use any oil in this. One could add diced chicken breast also for a little more protein.
I am going to have to cook my own black beans as I do not care for he canned variety. When you said you will not be using pintos for the tostados anymore…you made me come to this decision. The salad looks so fabulous. Great to take to a potluck or church social.

But then when I got married, my husband LOVED beans… so I experimented and I started cooking my own from dried beans. Gradually I started liking them more, first with chickpeas, the crummy texture was overcome by the creaminess of beans. The flavor was wonderful. Now I like and even love nearly all beans!

I'm surprised that you don't have a bean masher. A bean masher has small holes in a metal plate that creates smooth consistency for the refried beans. They can be found at just about any Mexican market.
That salad looks amazing! I just finished making fast beans with the black beans I had in my pantry. I love how compact the beans become once they’re cooked and dehydrated. Have you found a difference in taste once the beans are hydrated again? I tried a small amount and found that fast beans would not be good in a salad like this but would be fine in a cooked meal. Did I do something wrong if they aren’t as good as if they were just cooked and not dehydrated? One other question too, if I may? I soaked and cooked a large amount of navy beans yesterday and put them in the fridge last night before putting them into the dehydrator today. There was a gelatinous mess all over in the pan. I did rinse them all off but is that normal and would there be a way to save that gelatin and use it for something else? I’ve been watching a lot of wartime cooking shows lately and learning how to use every last bit of the things I cook.
I have also found that fast beans don't work for every recipe including salads but they work in lots of dishes. The gelatinous material was probably starch and is not a problem. You did nothing wrong and were right to rinse them off before using them. I don't know if the starch could be used for other things.
My son is terribly allergic to Avocado and tomato. Can you recommend a good oil I can use in place of avocado? I usually use canola, olive or coconut oils. None of those sound too appetizing for a Mexican dish, especially a dressing. Suggestions?

How does Jim resist the temptation to dive in while he is filming? Does he leave fingerprints of black beans on his camera lenses? By the way, did you deliberately pick out a shirt to wear that looks like it was illustrated with black beans? What time should I be there for lunch?
I eat black beans out of the can. I don't eat corn. I don't know what that first thing was but it looks nasty. Nothing should eat cilantro. Keep up the been episodes, this way I know what not to eat.

I like cilantro but I didn't at first it tasted soapy but that changed.
Yes, I think it can be an acquired taste as well.

Pam do you have a recipe and technic for making flour tortillas with and without a press?
We have a video on making tortillas. To make them without a press I have used a plate pressed against my counter top.

You might try a slow simmer when cooking them so they just gently circulate in the pot. That is the only thing I can think of!
