Assuming it's mercury (or alcohol) column it was seen to increase it's volume during this decrease in temperature which is not how physics works.
Only possibility is if it was some liquid with negative thermal expansion coefficient which is not that easy to find. I don't even know if any such liquid exists (other than pure water between 0 to 3.98°C).

I think he said Rapid cooling by Adiabatic change.... Its an isolated Adiabatic process & I presume that the temperature is brought down by decreasing the Pressure.... The meter indicator that is shown in the scene could be a measurement of Pressure... Remember that old Pressure meter that we see in a doctor's hand...? It pumps up & up and then comes down to show the measured pressure quantity. So, the same sort of device could be this one too...

I saw this movie when I was 12 years old and I must say, I was blown away completely! I had never seen a movie like that before. I was in wonder for a few days after watching it.

Hey guys, as mentioned in the scene, the water freezes so quick because it's a process called "rapid cooling by adiabatic change" do look it up, also it's not the temperature that goes up... If you look closely, you can see that as the indicator goes up, the temperature value is in the negative scale. Hope your doubts are cleared.

Actually, it's a nice movie. Vikram who plays as the lawyer has suffered a childhood trauma of his sister's death due to societal negligence or something. He's a good lawyer, but he is criticized for his straight forward personality.
His thirst for justice grows into its own personality called Anniyan or something like that. When he switches into this personality, his physical prowess are supernatural, whereas as a regular person he is an average guy with no physical buffs.
His split personality is a vigilante sociopath who kills criminals in the name of justice, each murder committed in its own unique way...
It's worth a watch... P.S - Hard to find English subtitles though...
