Healthy Chocolate Oat Muffins
Ingredients:
1 cup oat flour
1/4 cup unsweetened cocoa powder
1/4 cup jaggery powder (or any sweetener of choice)
1 tsp baking powder
1/4 tsp baking soda
2 tbsp olive oil (or any oil of choice)
1/2 cup yogurt
1/3 cup milk
1 tsp vanilla extract
Almonds, nuts, or seeds (for topping)
Dark chocolate chunks ( I've used 70% dark chocolate )
Instructions:
👉Preheat oven at 180°C (350°F).
👉Prepare oat flour by blending oats into a fine powder. Set aside.
👉Grease a muffin tray with oil.
👉In a medium bowl, mix the oat flour, cocoa powder, jaggery powder, baking powder, and baking soda.
👉Add olive oil, yogurt, milk, and vanilla extract to the dry ingredients. Gently mix until it forms a smooth batter.
👉Transfer the batter into the muffin tray.
👉Top with almonds, nuts, or seeds of choice, and dark chocolate chunks.
👉Bake in a preheated oven at 180°C (350°F) for around 30 minutes.
👉Let the muffins cool completely before serving.
