When they are coming to colour, be very careful to switch off the flame just before the desired colour and texture is reached. Assalam alaikum dear Sumera. Prawns ki smell jaane ke liye, humne pehle ise achhi tarah se dhoya hai, phir marinate bhi kiya hai, jis se iski smell door ho jayegi. Har chawal ki variety aur pakane ka time alag hota hai, aap chawal check kijiye, pakki aqni ke liye sade/plain chawal ke pakane ka tareeqa istemaal kijiye aur wohi time par paani nithariye, kachhi aqni ke liye chawal thode kachhe rehne chahiye. Yeh Biryani pakki aqni ki hai.
Bro... You can use tomato puree but only one tomato OK... Becoz in some of biryani's tomato is not used OK... And u will think how to make tomato puree (take a tomato and boil some water put that tomato in boil water after some it so skin will lose and then let it cool and then put it in a blender or mixer OK... It will be ready bye...

There are a lot of food combinations that do not go well with each other healthwise but we people still consume, helpless to control our taste buds. Once in a while for some dishes it's okay. Substitute to curd is lemon but for the gravy in Biryani, curd is really required.

Mostly in Hyderabad style they don’t use tomatoes as per my knowledge.
Looks good...BUT In a pure Hyderabadi Biryani, you don't add Bay Leaf or Star Anis! It could add some flavor... but Not in Hyderabadi Biryani..

Canned coconut milk is the substitute for curd which is commonly used in seafoods including biryani.:)
