    I only realized after finishing editing this video, that a lot of you were probably expecting to hear more about infrastructure-related issues but I actually don't have any complaints about that, village life in China has come a million miles in the past 20 years. In much of the country, gone are the days of outhouses and dirt roads. The only problem with infrastructure here is occasional freezing of pipes in winter. It's on the same level as neighbors setting off fireworks 🎆at 2 AM (?!?!) or burning old crop stalks 🔥... annoying when it happens, but it's not something I am dealing with frequently, so didn't make the cut for this vid 😂 Stay tuned for a "day in my life in rural China" video, coming up next!

      Chinese set off fireworks and firecrackers at midnight almost only during Spring Festival time, for other time, we do it at the daytime. For Chinese people, it's an old tradition to welcome the Lunar New Year in the hope that the loud sound of crackers can expel bad luck.

      As a fellow cooking-hater, anything I do cook has to be done within 5min or 15min max. Simple wok fried yellow egg noodles (sth east asian style) is the easiest go-to for me: 1. Butter, 10g of minced jar garilic + 100g of minced pork/beef into a hot wok till meat is cooked. pepper the meat. 2. Push meat to a side, then add 150-200g of yellow egg noodles to sit for 30sec. 3. The secret is the frying sauces: 1 tablespoon each of light soy sauce, siracha hot sauce, worcestershire sauce, fish sauce and dark sweet soy sauce (maple syrup consistency). 4. Toss all together and fry for 1min. 5. Add fresh bean sprouts/wherever veggies you like + toss for 10sec. 6. push wok contents to a side to clear space, then crack in an egg or to then mix all together for 10sec to just cook the eggs (almost scrambling them). Then, enjoy while hot!

      That's the adult life; busy hustling to pay the bills and fending for ourselves. No more going out and hanging with friends all the time because friends are also having to hustle and fend for themselves. Plus everything is so crazy expensive that today's income does not have the same buying power 20 years ago. You are too too cute!! It's insane that the dogs there bark 24/7. I would need ear plugs to sleep. You'd think it'd be nice and quite rural setting.

      I think the dogs like to lay on the road because it's warm(er). Then they lay in the shade during the hot summer.

      For cooking food at home, I would highly recommend you buying a cooking machine like what I do and they have Manuel cookbooks to teach you how to cook the Chinese food in very easy way. Or you can hire me to cook for you as your boyfriend 😂😂😂

    一个人,就算是中国人也很难给自己做饭吃……
    比较推荐的省事做法:
    1、速冻水饺(会做的可以自己买材料来做好后放冰箱里冻起来);
    2、煮汤面(非快餐面,配以煎鸡蛋、鲜肉片、午餐肉或火腿肠、加上新鲜蔬菜,营养又健康);
    3、窝饭(一个电饭锅搞定,饭水快干放入生肉片、调料,快起锅前放入洗捡好的新鲜蔬菜)
    4、煮饭+蒸菜(也是一个电饭锅搞定,锅里的蒸架上可以蒸荤素搭配的菜,比如鸡肉+虫草花、牛/猪肉+时蔬、肉碎+鸡蛋、腊味+时蔬……)

      其实阳离子可以买一辆车,在中国10万人民币内都可以买一辆很好的汽油车或电动车了,这样她或许去那儿都更方便,农村就买一个BYD秦电动车9万元,在家充电又不贵,跑杭州市至少3-4个来回,百公里电费就5元钱左右,那里不好?

      07年我在上海一个人的时候,就是用一个小的电饭锅,蒸饭、蛋、香肠,可以定时的,超级方便!现在应该有超多Wi-Fi电饭锅、气炸锅做热的,生吃的菜冰箱存一些!(考虑顾一个只做饭的阿姨?是另外一个选择)

    Hello Katherine, I am a Chinese student who is currently studying in US. I love your video very much. I have watched your video for almost 3 years.
    Your video is very interesting, beautiful and touching, always reminds my hometown in China, very oriental. And also, your video is very objective, just show what it is, no politics, no clickbait title such as "China is not what we expect",lol. Even as a Chinese, I don't like the exaggerated video to praise China or something like that. Just show what China is, how the ordinary Chinese people live, that's enough, the viewers will give their own conclusion.
    I think your youtube is underestimate, you deserve more subscibes, at least 1M maybe, lol. I guess the reason is your video is about Chinese village and the ordinary life in the village. But I really love it. Your video is a must-see for me every week. Hope you enjoy your life in China!
    Btw, you are very beautiful, kind, open-minded, passion, frank and sincere, wise and have a spirit of adventure. I have seen many US citizen in my daily life, you are the best representative of US spirits. And there is a famous Chinese poet named Yuanming Tao "陶渊明", more than thousand years ago, I think you might like him and his poem and have the same feeling about the chinese village. "采菊东篱下,悠然见南山。山气日夕佳,飞鸟相与还。"A modern Western beautiful girl and a thousand years ago chinese poet, isn't romantic? lol. Bests.
    At last, as for cooking meals, you could use some apps such as "下厨房" , I use it in US.lol You could download from apple store.

    A quick suggestion to solve your cooking problem - 1) build yourself a menu: list all your favorite ingredients, vegetables, meat, etc. 2) find an "elderly woman" who's a good cook and has a large family in the village. 3) make a deal with her and hire her to cook for you. For example, you can drop off your weekly meal plan with her, and she can cook for you (like 3 or 4 times a week). Then, you can pick up your lunch/dinner on your way back. I'm certain you can find some "aunties" out there who would love to make that extra few dollars - they make money and you gain free time - it's a win-win situation!!!

    如果你对吃的口味要求不是那么苛刻,可以找周围一家邻居搭伙,每月付伙食费,就等同于你买菜的钱,like homestay in the US without staying.理论上总会有几个好邻居,价格也不会贵,还能融入当地人生活 one stone two birds

    Love this video. Yup - people would think it’s so easy to meet people in big cities but we don’t actually hang out with a close circle of friends all the time. It’s all very disconnected. Embracing our imperfect environment that gives us the most joy and let the rest of it fall into place ❤

    Just a suggestion, maybe you can inquire if any neighbourhood auntie would not mind preparing some meals/dishes for you a few times a week for payment? I suspect this would be very simple for them and they are definitely very friendly.

    The barking dogs? Fighting cats? We got them too, in our residential area there's more, like loud bangs from purposefully modified exhaust pipes on bikes and cars, to children crying day in day out.
    Not forgetting the bangs on the walls constantly for whatever reasons.

      And in China, I don't know if it's still the case (I bet it is), when there are works and constructions, it's 24/7. So in big cities, you can hear the jackhammer at 3AM. Drives you nuts.

    Hey try ABC Soup. Simple as ABC filled with vitamins A, B, and C. Main ingredient includes tomato, potato, carrot, big onion and optional pork ribs or chicken, additional corns or baby corn. Serve it with a bowl of rice. Use left over rice for fried rice.

    Fried rice, you may cook some rice and meat , then freeze them, of course divide into small portions. Defreeze what you eat for the day in the morning. Just add oil and soy sauce, whatever veggies. You can eat all day from one cooking.

    Cooking for yourself some ideas; instant noodles supplemented with eggs, pickles, tinned/cold protein. Also cook enough rice for 3 days, day 1 boiled rice with a couple of dishes and you can cook everytyhing in the rice cooker at once steamed eggs, veg, protein etc), day 2 fried rice with whatever you fancy or with leftovers. Day 3 Congee 1 part leftover rice with 8-10 parts water, boil it until it becomes a porridge consistency, salted protein/egg, pickles go really well with it. I love what I call one pot cooking basically stick everyting in the rice cooker and press cook.

    Here is super easy sweet sour pork rib,
    1. cut the rib
    2. Put in a pot
    3. Add 2 shot glass of sugar, 2 shot glass of soy sauce, and 2 shot glass of Chinese black vinegar
    4. Put med high let it cook
    5. Stir it every few minutes ,When all water is gone, is ready .

    1.学会做面包,做一个大面包就够一个星期吃的了。院子里种点生菜。去超市买点火腿或牛肉还有cheese和mayonnaise就可以做三明治了。2.和村里人培养一样的爱好,而不是见面打个招呼而已,即使是多让人家帮忙也是更深的融入社区的一种方式。这样你没车也可以搭别人车去city或者地铁站了。

    About food, how about adopting a neighboring grandma. Contribute to grocery and you can eat with the family. It is doable in rural China.

    For cooking meals and not spending too much time, have these three tools -> Steaming, Soups & air frying. Just need to season the meats (soya sauce, pepper or chili etc) , having various seasoning (bean paste, pepper, Chicken/ Fish cube seasons), and just mix and match for fast and convenient cooking. Then do what busy Chinese do is cook one dish everyday, then keep in fridge. Then eat a potion of it over next 2-3 days, so always having 2-3 dishes with rice or noodles (Instant).
    Continue to have fun!

    Really nice to hear honest thoughts about a lifestyle thats often kind of idealised. I recently moved from one of the more busy districts of Beijing to way way *way* outside the centre. Although it's not nearly as rural, some of my complaints are somewhat similar 😆

    -A can with fried dice and black beans
    -Can of Luncheon meat ( with fried egg)
    -Egg with tomato
    -Dried/salted mustard plant chopped with chopped pork Meat... steamed ( google must have recipe and example 😊) .

    A simple Cantonese dish if steamed meat, usually pork:
    -ground pork seasoned with with minced garlic/ginger, chopped green onion, soy/oyster sauce, white/black pepper, rice wine, a little sesame oil
    -crack an egg in and a teaspoon of corn starch and mix
    -add preserved vegetables if you like that for extra flavor
    -steam for ~10 minutes, depends on quantity and heat of course
    Really easy, healthy, and low maintenance cooking.

    Rice porridge cooked with sweet potato either fresh or dried with sides of pickled vegetables, eggs (plenty of different styles, tea eggs, five spices eggs, fried eggs, neatened then steamed), and protein stir fry could last you a few meals

    Hi Katherine
    You could try frying fish (煎魚). After cleaning the fish, use kitchen paper to absorb the water from the fish as you don't want the oil to splatter when frying the fish. Just rub a little bit of salt on both side of the fish. Heat up some oil until hot, carefully add in the fish to the wok or pan and let it fry without moving it initially. Switch heat to medium, after about 2 minutes, using a spatula flip the fish over and fry for another 2 minutes. When it's cooked, dish up and sprinkle some soya sauce on it (optional). You can also stir-fry cai xin (菜心) or any type of greens. You need ½ tbsp mince or sliced garlic, 1 tsp sugar, salt to taste and cai xin {cut to finger length). Heat up 1½ tbsp oil in wok and add in the garlic. Stir-fry garlic until fragrant, then add in the cai xin and stir around and add in the sugar and salt. Stir-fry cai xin until it is just cook. If the cai xin is over cooked it will look yellow and limp. You can also try the soya sauce chicken. You will need chicken cut into bite size pieces, minced garlic, sliced ginger, light soya sauce, thick soya sauce (老抽), sugar and salt. Heat up oil in wok, add ginger and stir-fry until fragrant. Then add in garlic to stir-fry for a bit and add in the chicken pieces. Stir-fry the chicken for a minute or two, add in the thick soya sauce (1 to 2 tbsp depending on the chicken quantity, adding too much the dish will appear darker). Stir & flip the chicken pieces to mix with the thick soya sauce. Add hot water to cover the chicken and place a wok cover over the wok. Let it stew for about 3 minutes on medium heat. After 3 minutes, remove the wok cover, the liquid would have reduced, add in 1 tsp sugar, ½ to 1 tbsp soya sauce and taste the stewed liquid. It should be a tiny bit sweet and salty. If the stewed liquid is too watery, add a mixture of 1 tbsp cornstarch & water to thicken it slightly. If the chicken is done, dish up and serve. The stewing liquid can be spoon on the rice.

    I figured food would be on your list haha! I felt the same way when my family and I lived on Jeju Island, South Korea. We had restaurants but it was cheaper to cook at home. I actually got really into cooking Chinese food as I was feeling nostalgic and missing my time living in Beijing. I would highly recommend using recipes and techniques suggested by Woks of Life blog. They break down Chinese food cooking into ways that were very easy for me to try. My go-to recipes are mala xiang guo (dry hotpot), mapo tofu, and anything with noodles really. But honestly, I can't wait to move back to Beijing at the end of this summer and get all the waimai I want again! Will still try to cook a bit too...

    Katherine,
    You can try making lotus root soup (蓮藕湯). The ingredients are :
    1) lotus root
    using a vegetable peeler or scraper to remove the outer layer & then cut the lotus root into thick slices
    2) pork ribs, meaty pork bones or chicken meat
    3) 6 to 8 red dates, 1 honey
    date (optional)
    4) 2 tbsp goji berries
    5) Chinese parsley / Chinese
    celery
    Add water to a big pot (I just roughly estimated how much water is needed and also account for the evaporation during boiling). Add the red dates, honey date and lotus root. Turn on high heat, when the water is boiling, add the chicken meat or pork ribs/bones. After adding the meat, the water temperature will drop. When it started to boil again, let it boil in high heat for about 5 minutes and then adjust to low medium heat. The soup should boil in low medium heat for at least 1 hour or even 2 hours if you wish. But you must regularly check the soup does not dry out. When the soup is ready, add the goji berries and boil for another 2 minutes, do a taste test. If is too bland, add some salt. Turn off the heat.
    Ladled out the soup, lotus root, goji berries and meat into a large bowl and sprinkle some Chinese parsley/Chinese celery/chopped spring onion on the soup.
    You have soup, lotus root and meat for your meal, isn't it convenient ?
    Note : you can use a electric slow cooker. Less worry of the soup going dry when cooking.

    我最喜欢而且方便的是用电高压锅炖排骨,加上豆制品蔬菜,排骨买的时候让商家切好,然后水冲下放锅里,放盐和十三香,定时一小时左右就可以吃了,100块钱的肉可以吃两三天,另外排骨可以换牛肉羊肉,这菜处理非常简单,主要是等待时间,提前做就行了,电高压锅全自动,一个月排骨牛肉羊肉各吃一次,10天的饭就解决了

    Maybe you can ask your neighbor to cook for you or join them at meal time and pay by monthly. Lot of Chinese do that style during vacation in a village.

    One of the comments mentioned this but I also second:
    Quick-frozen dumplings- or frozen shumai- super simple and if you have a steamer even better.
    Ramen- whole stacks of them of many varieties
    Canned oily fishes (those oval ones with black beans or pickled mustard in there)- if you have rice you can twirl it inside it and it's heavenly goodness.
    Maybe an omelette maker or waffle maker. You can garnish it with veggies from your garden.

    Kat as a Chinese Canadian, I often crave complicated Chinese dishes, but I love the simplicity of preparing western dishes. A compromise that worked for us is preparing western dishes with Chinese (or other Foreign) inspired spices, condiments, pickles, or marinades.
    What I think is essential in any home cook's kitchen is a pressure cooker like an Instant Pot for stews and curries, a Rice Cooker, and an Air Fryer (you can upgrade to an oven or a bigger air fryer when you have a family to feed) for roasts and baking... maybe even a BBQ too. I meal prep, since a lot of my recipes can be scaled up to make a week worth of food at a time without too much of a hassle. I love cooking especially with my partner, but 2 hours a day is too much of a time sink even for a hobby! I think this is where we have it figured it out in the west better than in the east (75% of the flavour for 10% of the effort). I basically spend 5-10 mins a day to prepare the meals now daily, but you will need meal prep days in which you might spend an hour or two every once in a while.
    Get a freezer (key for meal prep), learn the basics of food safety to understand safe storage of your food. At home we basically eat bibimbap or rice bowls often. It's rice as your choice of carbs, salad and pickles for vegetables, some cooked marinated meat. We bulk marinade chicken breasts sliced thin, or thighs in aged balsamic, garlic, salt, and honey. Without balsamic, just use dark vinegar with fruit concentrate. The goal here is to brine the chicken so the flavour soaks in for at least a day. You can either roast the chicken in airfryer/oven or over charcoal bbq (my fave). I bulk cook and freeze extras, but you can freeze it portioned out individually in ziplocs and just defrost the day before and prepare the final step. I intentionally left out measurements for the marinade since I believe in seasoning to taste (just try the seasoning but don't contaminate raw food), but you are looking to make enough marinade to cover the chicken, salt until you are satisfied with the saltiness and then add just a little more than that. Garlic and honey are the optional ingredients but add depth.

    Re Cooking: Find a village amah to cook your meals. She might live alone and have few other resources. She could give you a list for the week (or longer). You buy the groceries (including staples, which she keeps at her home) in the closest supermarket. She cooks your meals all at once for the entire week. You refrigerate prepared containers and cook your own rice each meal. You pay her, of course, and maybe offer to share food.
    P.S. Happy memories of Hangzhou. Hope you have had a chance to visit the large, old-fashioned shop selling Chinese medicines. I sat there for a while, just enjoying the smells.

    for food, Buy a slow cooker n u just put in the prepacked herbal and drumstick or Pork Ribs. Many choices n u put them in the morning. home in the evening n they are ready.

    如果你想吃蔬菜的话。比较简单(这里推荐都是不需要放调料和配料的,放点盐就行),吃这些菜,自己下一点面条就可以了,不用煮饭。
    1:生菜(水烧开,生菜放里面煮一分钟就好了,其实煮多久都没事,因为生吃也可以)
    2:炒鸡毛菜,茼蒿菜(根部切掉一部分,然后切段),有些蔬菜不好抄,这两个我觉得很好炒。 锅热,到油,然后直接把菜放进去就行,
    3:青菜炒蘑菇,(锅热,到油,放青菜,炒一分钟,放蘑菇,炒一会就好了,自己吃吃看熟了就行)
    4:青椒炒豆腐干(锅热,到油,放青椒,炒半分钟,放豆腐干,炒至断生,自己吃吃看熟了就行)
    其实还有一些也很简单,但不知道你的厨艺到什么地步,就不推荐了。我这里都是一些自己大学毕业喜欢做的菜,不是什么很标准的炒菜方式。
    偷懒点还可以去超市买一些速冻水饺

    cabbage and canned beans, brown the cabbage first (recipes on UA-cam)
    Dal (e.g. Dal Makani), any combination of beans and spices paired with rice or Nan, or Tortillas...
    chicken breasts marinated in yogurt and tumeric, spiced oil with onions and garlic and ginger,
    curries with Bumbi is a good youtube channel
    also, cook enough to do leftovers 4 or 5 days and do restaurants for 2...

    I live alone in Texas, US. Not difficult to eat out, but I often cook because it is more economical & there aren't that much options anyway! I usually make a everything in pot -- say a big pot of porridge. Then vary different portions with addition of different types of meat/vegetables/eggs etc. One of the thing I do is - a big portion of "fried dried (& rehydrated) shitake mushroom. Refry each portion -- taste better after refry & cook with noodle/rice/omelette

    Living in the rural U.S. has the same problem with food. My recommendation is to have Yami deliver things which are nowhere near as good as having fresh food, but they do have the best Chinese food that most of the time only requires boiling water.

    Thanks for making these videos, I hope you continue! I am planning to move to China, hopefully in 2025, for an unknown amount of time. I watch a lot of Little Chinese Everywhere, and I am really interested in exploring rural China and learning about different areas, but until seeing your videos I wasn't sure how easy that would be as a foreigner. Of course, it helps that you speak such a high level of Mandarin, but it's nice to see a foreigner actually doing interesting and meaningful things, and not just posting the same old clickbait videos. :)

    Hi Katherine, have you explored hiring a grandma part time to cook and maybe clean for you? That’s quite common (at least in the cities), and relatively affordable. So you get to have Chinese home cooked meals without much thinking!

    Get a microwave oven , hotplate, a steamer, freezer and a refrigerator for cooking a mass of food and freezing or refrigerating. Use microwave for quick heating or a steamer for frozen siumai, dumplings or even buns. Get a flat hotplate to make Chinese crepe and spatula for egg spreading and folding for a quick Chinese crepe breakfast. Get frozen frozen wontons, siumai, fishballs or meatballs and other packaged foods and freeze them.

    I hear you about the dog barking and can't stand it. A long time ago when I lived in New Jersey where the neighbor's dog barked every day for five years. No more, thank goodness.:) For someone who doesn't like to cook, I would assume it's probably easier to live closer to cities where you have more meal options. I make two simple dishes for myself: 1. I cut chicken thighs into small chunks and add salt and pepper, then squeeze the whole lemon and mix. I let sit for a while and then cook in a frying pan in medium heat for 20 minutes. No oil is needed because the chicken thighs have skin. Voilà! 2. I boil a piece of salmon or any fish, about one pound, for about 8-10 minutes. Take it out and put on a plate. I mince the garlic and put it in hot oil for 3 seconds and remove from heat. Pour garlic-oil on fish and add salt and pepper. Simple and healthy.😊

    For all the mod cons, chain restaurants and cafes, you can also go to the county town Anji, which is only 20km from Baizhang towards the opposite direction of Hangzhou. It's much nearer than Hangzhou. Of course, owning a car can instantly change your life in the countryside. It's just about 20 minutes' drive to all the restaurants and stores, not too different from living at the outskirt of a city.

    Cooking for yourself
    Try cooked a batch of ground meat spaghetti sauce to eat with pasta
    Made bone broth and freeze it in multiple individual portions for noodles or soup with meat and vegetables to eat with rice
    Steaming some sweet potatoes and Japanese pumpkin to snack on or eat for breakfast
    Lots of more ideas if you are interested

    The dogs would be annoying 😢 I was chased by quite a few during my bike tours in China😂 especially in the countryside! Shame you don't have time to cook, a lot of Chinese dishes can be made very quickly tho 💪 Just don't try to make jiaozi and baozi 😂😂 Nice vid 🙏

      一个人的话买三斤五花肉,切成小块,先放一些肥肉多的炒出油,放入八角葱段,再放另一部分,加料酒,挥发带出异味。炒到肉变干了,事先把黄豆酱和甜面酱放到碗里,就袋装的葱伴侣,1:1比例搅匀,加入酱料,你可以尝尝味道,咸了加水,注意搅拌。也别管酱油分离了,煮七八分钟没水分就行。可以加点鲜香菇增加层次口感。室温放凉保鲜膜密封保存。吃面的时候切点黄瓜胡萝卜,碳水,油脂,纤维都有了。每个地方做法不一样,你尝试一下就能摸索出适合自己口味的。和红烧肉差不多的油糖混合物,美国胃应该不抵触。

    Indeed while in urban area, you can find any kind of restaurant you can imagine, it could be difficult to find one in rural China even if it is just one bus ride away from city center. The first time I went to my ancestral village in Zhejiang. It is about one hour bus ride from city center. I could not find a restaurant in the village or in the town center. That was about 15 years ago.

    Dumpling and noodle is definately what you want if want to be simple and easy. 1. Dumpling is easy but some time is too simple maybe, but definitely easy., just boiling for 10 min. 2. Noode, some oil, garlic pieces, bacon, then adding water, after boiling, throw some noodle (not instant noodel though), and one egg, some green vegi (I know boiling vegi seems weird in the west but pretty normal in China) . I would directly eat with my small pot, dishwashing is also easy. I personally like noodle more, since it is more customisable and more kinds of nutrition.

    Thank you very interesting, although I mainly traveled to Japan from the 1970’s onwards, I was lucky enough to visit Hangzhou in the late 70’s and organising some conferences there in the early 80’s although there was an airport, travel was by steam trains via Shanghai, happy days

    Since you hate cooking, I suggest you try a 炒菜机. Maybe you can even contact a brand and get make a sponsor video. I'm sure it'll make your cooking life much easier. I know some of these machines come with recopies, so you know what to buy and how much to buy when visiting a grocery store.

    With the aging pop in that village, isn't there a cantina? While they're meant for serving the older folk, it's not necessarily exclusive. Use it once in a while if you're stressed cooking - they'll enjoy the company.

      The village has one, but it depends on the overall financial situation of the village government; if it is very good, then a village canteen will be set up to provide for the elderly, and if the financial situation of the village government is not good, then basically the elderly in the village will be cooking at home by themselves

    You can ask catering from th neighbours to cook for you, since you can speak well. Tell them to prepare food hot at what time to deliver and what kind of food you want. Give it a try.😊 Neighbours can earn, you can have more time and you can enjoy local food.

    Look up rice cooker recipes if you eat rice and Instant Pot recipes for soup(then add pasta or noodles). Both take minimal effort, taste okay, and are hard to mess up. This is how I get by living alone in Canada.

    I have a good recipe for you. Get a rice cooker, make a full pot of cooked rice, separated it equally in a few portions, each portion for one meal, then wrap them up put is the fridge. For one meal, prepare few eggs, some veggies, like beans corns, some diced ham, throw every thing in a wok and keep stiring until they are cooked, put some salt, peper, whatever seasoning you like, and their you go. Simple fried rice!😅

    盐水鸡腿(非常简单):鸡腿洗干净,每一个鸡腿抹上一调羹盐(one table spoon), 然后 放在冰箱里面。盐可以多,也可以少,看你的口味。如果尝试了,觉得太咸,下次少放一点。
    第二天拿出来,洗一洗,然后放在水里煮。锅里一半是鸡腿,一半是汤,大概放这么多水这个样子。水开了以后,煮20 分钟就好了。把鸡腿捞起来,吃热的,或者放在冰箱里,第二天吃冷的 ,都可以,都很好吃。
    锅里的鸡汤可以放一些蔬菜,如萝卜,或者土豆,或者其他都可以,再煮一下,也是好吃的。

    Interesting life and perspective about life in China. Depending on what one wants but overall it ain't bad. As for food, perhaps you can contract out to eat with a family a few times a week or have someone cook for you a few times a week.

      Crawling insects rarely harm people and they are easily caught or kept away, but those almost invisible tiny mosquitoes are nuisances, they are hard to catch, even just one hiding in the room can keep you miserably awake all night. I am allergic to mosquito bites, one bite can make the whole skin area swollen and sore. The most effective mosquito repellent sprays contain Deet which is a very harmful toxic chemical known to cause cancer so I don't want to use it. Natural mosquito repellents don't work well if any at all. Burning mosquito coil produces harmful toxic smoke so forget it too.

    Just get yourself a big pot that can hold whatever that will last several meals (or days.)
    For a start, try a traditional Western stew. You can have it with bread, with spuds, with pasta, or even with rice for variety.
    I'd definitely try cooking big pots of curry simply because there are so many different versions of it. Just add whatever meat or seafood you fancy - for each meal if you prefer.
    I admit I am a curry lover so probably your mileage may vary, but I think you get the idea...

    Is Katherine in Baizhangzhen, 百丈镇, Northwest of HangZhou? It is a place very few Americans ever visited. For cooking, I recommend to buy live chicken and fresh eggs from villagers, or even better, have them cook for you. I lived in a Chinese rural area for a year before I went to America for graduate school and I did have a few locals buy food and cook for me. It is cheaper than eating in restaurants.

    Invest in an instant pot. You can prep a larger portion on Bolognese sauces, beef stews, etc. Freeze them in small portions and use them as needed.

You can also make sandwich with eggs and tomato . Whatever left over can use them to make fried rice or noodles with peas carrots onion , bell papers bean curd and eggs with any spice you like .     I love the place where you live. It is so peaceful and beautiful. I can only imagine your walk throught that huge bamboo forest. Wow amazing. Unfortunately dogs always bark even in some residential places! Yes it may be very annoying, indeed. But being surrounded by a lush vegetation it is just marvellous!
