The main reason to season and burn off is to burn off any of the manufacturing residues that may be left on the smoker.

If i want to do a slow cook at 185, how do i do it?
Leave the main door open while you're doing your preheat. Let all that dirty thick start up smoke out before closing the door to finish pre heating. Doesn't take it any longer to warm up and helps keep it a little cleaner and also will make sure that it doesn't blow up on you. Pellet smokers can blow up when all the internal combustion gases are trapped inside.
This may be good information and the way you operate your smoker. However, none of the manufactures recommend to open the lid when preheating.
@@SouthernBackyardCooking , pellet grills exploding is a real thing. It can fill the space with combustible gasses when trying to get going, and as soon as flame ignites you can have a big problem. There are many videos of it happening on UA-cam if you don't believe me? Besides, why would you want all that thick nasty white smoke rolling in there anyway? Opening the door will not hurt anything at all, and it doesn't take it any longer to heat up to temp. I'm talking leaving it open for about 5-10 min while you're display still says Pre.
Anyhow just trying to help out a little. Keep on smoking brother!! I hope you are enjoying the Ok Joe, love mine for the most part!

Few questions,
Why did you coat the interior with light coat of oil?
Do you still do the gallon ziplock bag method?
Suggestions:
For such newbies,
1. Could you explain why certain things are done? Such as coating with oil.
2. Music was a bit too loud! Certain parts of the video were hard to hear you or couldn’t really hear you at all over the music.
Other than that amazing job! Keep it up.
The main reason you coat the inside with oil is so that it won't rust and that meat and byproducts won't stick to it

Hey Don - I ended up buying the same model. Can you tell me if the blower cuts in and out? For example, temperature set to 220...as it reaches that temp, the fan cuts off for a few seconds, then back on...curious if that is expected.
Yes, it is supposed to do that. It helps regulate the temperature.
I'm very curious on how evenly this grill cooks. Maybe a biscuit test is in the future?
In a couple of weeks I am going to be cooking two Boston butts for pulled pork in seeing what the difference is. That should give me a good idea of how well it cooks compared to my Z-Grill.
Have had this model for 2 months, many cooks and a biscuit test. There is a hot spot lower center and also a little on the right hand upper corner. Not an issue when you learn where they are. I smoke everything on the two upper racks and grill on the bottom grate for best results
@@jacobbohrer661 That is good information, but every smoker is different and they would need to find the hots spots on their smoker.
