    Hello Diane from our farm in Central ⛵⛵ Lakes Region New Hampshire. A year ago, I had my gallbladder removed. It was inflamed and tried to take out my pancreas and liver with it. Still in recovery, but doing well on a strict diet from my hospital dietitian. You will be pleased to hear that she has me on a modified Mediterranean diet, that includes Greek foods. I cannot drink alcohol, but would like to cook with it. What is the approximate percentage of alcohol that cooks away in the average prepared dish? I like to cook with sherry as well. I'm allowed olive oil in moderation and find myself lightly spraying it on filo wrapped packets of spinach and herbs. Your recipes are amazing! I am going to try the chick pea dish that you slow cook in a " bean pot" with olive oil tomatoes, garlic and other vegetables. I can have all the seafood and fish I want, plus white chicken. You offer a wide variety of recipes for me to try. I look forward to following your channel and your shows on educational TV. Do you have a basic cookbook on Greek foods? All the best! ~ Diane H.
