Could this roll possibly be the roll that Marvin Hamlisch wrote the Sting version about? It has a lot of similarities, the slow start, the harmonics in the right hand, the B strain being played only once, the C strain being completely skipped, the return to the A strain after finishing the D strain and so many more!
The machine looks well restored, but the action needs some work by the sound of it. I've never worked on one myself but I'm guessing a regulation and hammer filing would be incredibly difficult. Even a tuning looks like it would take a lot of extra effort. Not to say it's a bad video, I loved it. But after seeing how much space the player mechanism takes up it makes sense why they're always out of tune.

Schulz without a "t" had their own design. This has a standard action, but the piano itself is a Schultz. I have tried my best to find out more about that specific company without any luck. It may be a brand within the H.C. Bay company, but I'm not entirely sure.

It's just how the roll is... I thought the same thing as you the first time I played it!
The tempo varies on purpose. That’s why this type of music is called ragtime.

It's called ragtime because of the syncopated melody against a straight oom-pah rhythm. The tempo does not usually vary like this.
