I love Salmon Croquettes,I make them often. I've never made them with fresh Salmon. I use Chicken of the Sea Pink Salmon in the can. I always end up pan searing my fresh Salmon, next time I buy fresh, I'm going to make fresh patties.
I actually tried Salmon Croquettes for the first time this year and they are really tasty. A lot of my family doesn't care for seafood, I'm like one of the few in my family that has a taste for it. Oh well, more salmon croquettes for me!

Awesome looking Botulism patties Charlie ! lol that`s what we called mom`s when she made them. she was always swearing that we`re going to get botulism from the salmon that her brother gave us. (the L is silent in salmon, just samon) They`re even better if you use the salmon raw in it. you put raw eggs in, same difference. I, myself, use a silicone baking sheet under my Salmon instead of greasing the baking sheet. The results are AMAZING! You should try it!
