Amazon is loaded with options for buying the beans in snack sizes as well as larger quantities. Salted, roasted, etc. is available. Azure Standard also has organic edamame in two sizes.
I was looking to do the same with Wasabi Peas. Everything I found seemed to start with freeze dried peas and then baked with the coating. I have not tried it yet.
Not quite "keto friendly" if you are strict as 1 cup has about 14g of carbs. Of course, you could try to eat just 1/2 cup or have this as your whole carb allowance for the day.
Winco chain super markets has them shelled and frozen. They do well raw and freeze dried. Think they run a buck or 2 for 16 0z

I remember eating roasted soybeans as a kids in the 70s as a peanut replacement. Got them at the health food store. Soybeans have their own fat so you should be able to roast them without additional oil.

I purchased them in the freezer section and were taken out of the hull. put directly on tray and then put in freezer so the tray would be frozen also. they turned out great.. frozen edamame beans are frozen after being blanched so not raw from the plant.

Walmart has loose soy beans for sale. I'd steam them before freeze drying though
Why do you pre-freeze in a deep freeze freezer before freeze drying in the freezer dryer?
The first thing a freeze dryer does is to freeze the contents. Prefreezing allows you to prepare several trays or even different batches to speed up the process. Many foods also freeze dry better when frozen before adding a vacuum
