Here's a helpful tip when draining your grease. Line a metal (heatproof) bowl with aluminum foil, drain grease into bowl. When it's cool, you just wrap up the foil and discard it. No plugged drain. I put this and raw meat packaging, into a plastic grocery bag in the freezer until dump day. This works very well in the summer when you don't want the smell or flies in your garbage can.

I just purchase my freeze dry machine and planning to freeze dry chili . I notice you said fat going rancid. So beef and pork has a lot of fat . So is there a certain part of meat part we should avoid because I’m planning to do long time storage . I noticed you also weigh before and after ?
Question: if you added boiling water to the bag and then clipped the bag closed would it not keep more moisure in and penetrate into the beans maybe at the same or close to time frame as the rest of the ingredients. I am so wanting a freeze dryer but on of those things I can't afford, but I keep watching and learning just in case one day I do. Also, I LOVE you hanger on the top of the bag. A peg board pantry would be a great idea and take up some room for something else. Thanks so much.

You ever seen it to where the machine will hold a dry vacuum under 500mTar but when its freeze drying it can only achieve 700mTar and there is a ton of frost on the top of the rubber seal?
I love chili, I just wish there was a way for someone like you or I to check the sodium level. I am on a sodium restrictive diet and would gladly go sodium free on a lot of my food just to be able to have some homemade chili.
I wanted to try this before I FD’d it. I made it using ground turkey instead of beef and it was amazing!!! My husband and I both loved it. We love ground turkey and that took the fat factor out for us. Thank you so much for sharing this recipe!
Sounds good and close to my favourite recipe. Question: when I take lid off my Instant Pot for burned food, I have to let the machine cool way down before I can "throw" the lid back on. Is this not how my Instant Pot should be working?

I have done chili, and it is great when you rehydrate with boiling water, so that it is hot still when it is rehydrated. Same with american golash.

I can't get my beans to rehydrate. More water, more time, more stirring. They're still chewy and dry
I can't help to think that that "bean" setting is more meant to be use for dry beans, not canned...
I like, adding some molasses to my chili.

I’ve let my chilly set for 15 mins and they are still dry. Have you found a way to hydrate them?
It probably needs more water. My chili rehydrates within minutes
You say the weight is 21.32 etc. What unit of measurement are you using - grams, lbs, ounces? That info is helpful.

If you FD anything uncooked the FD doesn't cook it. I've never tried making pumpkin pie with raw pumpkin so who knows if it would come out the same.
