I wonder why she said not to use spoons to mix the salad. For a simple hygienic reason you should avoid touching food with your fingers as often as you can, shouldn't you?
Using hand massages dressing much more effectively so that all vegetables are dressed correctly. Any decent person should wash hands correctly, even when not cooking so sanitary is not an issue.

seanonel fennel and apple is one of my favorite combinations! fennel and radish is also great.

that's micro greens. Thy are tiny shoots of all sorts of plants (arugula, basil, cilantro, beets). Whole Foods often sells them.
