Orange and Fennel Salad with Pistachios

Enjoying fennel this winter season, with some Cara Cara and blood oranges. Cara Cara oranges are sweeter than regular navel oranges, which is why I love them. Blood orange are a deep, rich red, and they add vibrancy and visual interest to an otherwise mostly-orange dish. Maple syrup is my favourite sweetener, especially given the abundance of it here in Canada. If you can't find maple syrup, agave or honey are also good. The pistachio nuts add extra crunch and also a delicious, unique tone to the overall flavour of the salad.
Ingredients:
Cara Cara oranges
Blood oranges
Fennel bulb
Lemon
Italian parsley
Maple syrup
Olive oil
Shallot
Chives
Pistachio nuts
Kosher salt
Black pepper
