Weekly Reset & Homemade Kitchen Restock

  • Each week I take some time to do a bit of a weekly reset and restock of our homestead kitchen. Join me for a couple hours in my kitchen as I prepare for the week ahead with my weekly reset and homemade kitchen restock.
    Steam Boiled Eggs
    Bring a pot with a steam basket insert to a boil. Place eggs in steam basket and cover with a lid. Steam for 12 minutes, then transfer eggs to a cold water bath.
    Homemade Gummies
    3 1/2 c juice
    5-6 tbsp grass fed beef gelatin
    Sprinkle gelatin overtop cold juice. Allow to bloom 5 minutes. Whisk and heat over medium until gelatin is fully dissolved. Pour into glass baking dish or gummy molds and allow to cook completely.

    Cheddar Crackers
    8 oz shredded cheddar cheese
    1 tsp salt
    4 tbsp softened butter
    1 c flour (all purpose, gluten free all purpose or oat flour)
    2-4 tbsp cold water
    Mix together cheese, salt, butter and flour until crumbly. Add in water 2 tbsp at a time until a dough forms. Form dough into a disc and wrap in beeswax wrap or plastic wrap and chill in fridge for at least 30 minutes. Roll out dough to 1/8 thick. Cut into squares, transfer to a baking sheet and bake at 375 for 15 minutes.
    Oat Flour Crackers
    6 tbsp water
    1 1/2 c oat flour
    3/4 t salt
    1/2 t baking powder
    1/4 c melted
    herbs & spices to taste
    Mix together all ingredients until a dough forms. Roll out dough on a parchment lined baking sheet and cut into squares. Bake at 400 for 13-15 minutes.
    Overnight Oats
    1/3 c rolled oats
    2 tbsp collagen peptides
    1 tbsp brewers yeast
    1/2 c milk or greek yogurt
    2 tsp maple syrup
    1/2 tsp vanilla extract
    fruit

    1 tbsp raw honey
    1/4 tsp salt
    5 drops trace mineral drops
    2-3 tbsp lemon juice
    water

    I steamed cranberries for juice after Thanksgiving and found it an easy task. One thing to remember is that only do one or two bags at a time because they get very mushy. I found this out the hard way. I used what was left over and canned various items for future uses. The juice turned out beautifully, and I added very little sugar. I enjoyed this technique so much that I went and bought 15 more bags for the freezer to process in a few months. Worth the effort foe sure!

    Steaming is my preferred method for hb eggs too... Plus ice bath. It works great!

    Does the brewers yeast change the taste of the oats? I have a whole bag from making lactation cookies I need to use before it goes bad. Never thought to add it to overnight oats!

      A bit but I don't mind the flavor and the berries/maple syrup cover it up some. You could try it with less to start :)
