One of our favorite dishes. I make it with ham hocks - fresh, NOT smoked. You have to boil the hocks until the meat can easily be removed from the bone and don't forget to skim off the "schiuma" as you cook them. Use the broth instead of chicken stock. If I can't find ham hocks, I will use Italian sausage. I like the flavor of the fennel seeds. I also braise the freshly washed, slightly wet, escarole directly in the olive oil and garlic and peperoncini. Carefully. Escarole is difficult to find in New Mexico but was always available on the East Coast.

My Nana used to make me this soup. I finally found escarole in Florida! Yay…thanks for sharing. She made hers just like you do and added Italian sausage once in awhile.
Looks good! My mom taught me to do using water, no broth. After the war, this meal was cheap and easy to make.
