    The epitome of poor man's food. Pasta & beans. Pasta e fagioli. Or, as it has come to be known here in the North East, pasta fazool (I cringe to write that). Whatever you call it, however you make it - it's an easy, quick and delicious dinner. Perfect for a chilly weeknight! Buon Appetito!

    People stop moaning how she made it u can make it how u want she can’t please everyone it’s not a joke she made it just like my mum as she was from Naples that’s exactly how u make it it will b very tasty u don’t need meat with everything it’s really good of her to share her recipe brilliant work u will always get negative people keep going

      My relatives always talked about how italy was a manly a poor country, cooking was often what you had or could get.
      To me the beauty of Italian cooking is a recipe is just a suggestion.

    My Irish friend made the best Pasta Fazule ever!!! And didn't even know it!!!! He just called it macaroni& bean soup. !!!! Personally,,, he can call it whatever he wanted to, all I cared about was another bowl. !!!! Hahaha. ! 😎✌✝💕🇮🇹

    Made this soup and my husband loved it. It reminded him of his nonna making it. I'm Italian and learned how to cook at a early age of 7. Since then I've been cooking away.

      @@CaraDiFalco hi, could you do a good fresh minestrone please. Love that stuff with fresh bread as a winter warmer but could do with an authentic recipe. I find family recipes are always best when it comes to any dish so if possible please post a good minestrone. You know what your doing so waiting with a growling stomach! !.

    Ty so much, Cara. Finally found, I can tell this is how my Mother made it. She was a great cook, family from Naples, however I was shooed away from taking part of cooking and preparation. "Go practice your piano!" But I remember glimpses, and of course the dish - mmm the flavor. My Mom would sometimes drop in at end a couple of her yummy meatballs. Will be checking out your other videos. Grazie!

    My partner is Abruzzese and her family have a similar delicious recipe of this, i fell in love with this dish the first time i had it. It's a very regular dish for us in the winter, delicious hearty and inexpensive...just don't forget the crusty bread!

    My mom always added some chicken or beef broth. And sometimes she made it with bacon instead of pancetta. Which I loved. She also put some parsley in it. And this soup was so good that I can live off of it. She passed away 2018 and my sister and I are dying for it so I think it's time to make it.

    Thank you for sharing your recipe. I was happy to see the genuine simplicity of it. Very similar to the way I was taught in a restaurant owned by a family from Abruzzo. It was made to order with cannellini, ditallini, a bit of red sauce and chicken stock. Very much like yours. Far too often this peasant dish is overdone in regard to ingredients and technique. Authentically, it’s nothing to fuss over which is what makes it so good! Saluté!

      All peasant food is tasty. My Mam and Nana can cook something good from next to nothing. Even the inexpensive cuts of meat they have recipes for that.

      Exactly! I specifically was looking for this type of pasta fagioli! Without meat! Simple like many Italian pasta Fagiolis I’ve had! I’m from jersey and whenever I got to an Italian restaurant I’m so happy when it’s this type of pasta Fagioli and not the other darker kind full of meat and stuff! I love the simplicity!

    This light colored pasta fagioli is hard to find! I specifically was looking for this recipe! I’ve been to a few restaurants in my life that make it this way. I like it better then the darker color pasta fagioli with beef and veggies. This one is simple and delicious!

    I’ve been down the UA-cam rabbit hole looking for the perfect recipe for pasta fagioli, and I ended up using a mix of multiple channels. There is sooo many different ways to make this, I can’t complain. I ended up making my own veggie stock a few days prior. Made a sofrito (rough chopped carrots, celery, onions), garlic, olive oil, tomato paste, canned cannolini beans, and an Italian seasoning blend. Next time I’ll add a ham hock or some prosciutto to to the sofrito. Or maybe crisp up a good quality prosciutto separately and add it at the end for texture, like adding bacon bits to baked potato soup. I puréed one of the cans of beans with a little stock in a blender and added it to thicken and cream the soup. Pro tip .... I cooked the pasta separately in a half water half stock blend. Then once the soup was cooked to my liking I poured the hot soup into a bowl of the cooked pasta then added freshly grated pecorino Romano cheese and it was bliss. Cooking the pasta separately in the stock/water blend adds the flavor to the pasta while also allowing the soup itself to be frozen and able to sit for a few days or so in the fridge without making the noodles soggy. Just cook the pasta as needed if you’re not going to eat all of the soup at once.

      @@CaraDiFalco Indeed. I’m planning a trip to Italy next year. Being single it helps to make big batches of soups, stews, chili, etc., and freeze them in small portioned bags and take out what you want when you want.

    Hello - that looks healthy and delicious! In my region of Puglia the only other ingredient we always add to this dish is celery. Since I moved back to the US, I have gotten in the habit of sautéing a little bit of bacon with the onion, garlic and celery. Just another way of making it!

    Put in Garlic sauté for a little bit. Add the Cannellini beans and cook for 5 - 10 min. Add 4 Oz of tomato sauce cook for 5 min. Add water. About half a cup or more. Add the Ditalini for the pasta and stir. Similar to cooking risotto. Add more water if needed. Salt pepper and fresh basil leaves. From Naples and this is the way we make it. Your version is very close and I am sure very delicious.

    Yes my Grandma made it with the leftover pasta sauce. She used red kidney beans. Our Italian family called it Pasta fagiola! Your version here is very simple just like what I'm used to. Only thing I do is add a little bit of basil and parsley as well as the oregano. I enjoyed your video. Others I've seen put too much in it. Why all the vegetables? We're not making minestrone. I never considered this dish to be a soup in the first place. Pasta fagiola is pasta and beans in a light creamy broth.

    Actually ditalini means literally little thimbles and cannellini beans are kidney beans - there are red, pink and white kidney beans and all of these are cannellini beans. Your dish looks delicious. The method you use to prepare it is different from mine, but it looks hearty and inviting. I normally add celery to my pasta e fagioli. In my region of Italy celery was always added to pasta e fagioli.

    Hi Cara. I just subscribed to your channel because of the way you made this dish. It's exactly the same as I do it which is also the way my mother and grandmother made it. One exception is that we use butter beans instead And yes we use leftover pasta sauce. Keep up the good work as I look forward to seeing many more of your videos

    Substitute for haricots if you can't stand them is diced potato added closest to serving time. A little pancetta con Parmigiani formaggio....stupenda 😘👌

      It SERIOUSLY is but every Italian's mother had their own recipe: mine was no different!! Started with in a LARGE saucepan gently frying chopped garlic, making sure not to burn it, then add chopped fresh tomatoes and chopped bacon, stirring and frying further. Add 1litres of freshly boiled water, add in a knuckle of pork, add more water if needed to cover, bring to the boil, then cook on low heat for an hour: remove as much of the meat, cutting into small pieces, add the bone and meat back into the pan. Add two cans BORLOTTI beans and cook for another 30 mins, removed rest of meat from the knuckle, adding to the pan again. We liked small shell shaped pasta, cook as preferred [we always liked beyond al dente, sacrilege to some I know, but that's how it is!], add chopped parsley at the end for a beautiful earthy flavour. When I cook it, I like to add mushrooms for about 5 mins before serving. REMEMBER that others in the house may need feeding: mum told me off one time for getting through 5 LARGE bowls - I weighed about 115 lbs back then hahahahah - forgetting that dad was due his dinner 👍👍👍🤣🤣🤣😂😂

Another thing also is now I live alone I STILL make this, I get at least 6 meals out of it, it freezes really well! Mum is 90 now and would still be cooking things like this but she had a mini stroke about 10 years back and has got progressively worse on her feet 😪😥 She made the BEST PIZZA EVER as well.

    Thank you thank you thank you for a simple, direct pasta fagioli recipe that is almost identical to my grandmother's. I have been searching for a matching recipe that reminded me of her's (I don't think she _ever_ wrote it down) and I keep finding "Olive Garden Copycat recipes" with (ugh) sausage?! No, no, no, what are those people thinking?!
    This is the perfect "pasta fazool" (I also cringe to write that).

    you don't need to cook the pasta separately... in italy it is done in the same pot.. cook the paste/tomatoes and aromatics with hot pepper first. bloom if you use paste. add beans.. then the water and let the tomato flavor develop. then add the pasta and let it cook in there.

    Nice and simple. We are from Catania. The standard bean in Sicily is the cranberry or Roman bean. Like you I love cannellini.

      Cara Di Falco Thank you! I’m half Italian and I remember my mom and grandfather making it when I was growing up. I will now attempt making it instead of paying for it as a take out item at a restaurant. Do you rinse the beans once they come out of the can (I realize I reserve some of the liquid from the can)? 😊

      @@mssagittarius615 if you find beans give you tummy trouble, rinsing them will help, otherwise it's not entirely necessary. It's more a personal preference.

    I guess theh ones who don't like oreganum are the ones that have tried this dried herb that supermarkets call it oregano...
    With grass flavour...
    Try some good quality Greek oreganon and you'll change your mind.

      My friend's Nonna (fresh off the boat) made a KILLER pasta fagioli with red kidney beans! But the overarching message is that people can make their food their own and use what they like!

    I like to blend up a half cup of beans into a paste and add it in,,, of course, you will need to add more liquid and adjust to your desired thickness,, I prefer a lighter color and creamy texture to mine,,, but this is only my way,,,, you can certainly make it anyway you wish,,,, TY !!!! 😁👍💕💕💕

    Make sure you drain the pasta really well, then get some pasta water and add it....
