Pasquale, I made your escarole n beans (white version) tonight for the first time in my life. It is delicious. I did an overnight soak of the beans method, I paid a little extra for the chicken bone broth obtained from the freezer section rather than the stock stuff on the store shelf. I used a-lotta-gahrlic-ovah-heere! I also toasted the bread under the broiler brushed with olive oil and rubbed them with garlic. This recipe was built for dipping a quality bread. Anyways, thank you for another delicious and fun to make recipe. FYI, I was going to turn on the radio to help me get the dishes done but, I was making my own music and finished the dishes in record time 🕢🤣 In fact, if I closed my eyes and just stood still and listened, it sounded like the whole Beppe Cuomo Orchestra was in my kitchen doing the dishes!🤣🎶 Cin-Cin ah-salute!🥂

This looks great perfectly clean Escarole using Dry Beans which is a plus. I love Hot Peppers 🌶 the hotter the better. You used onion and garlic with some picante The bread looks amazing . This is a great meal anytime. The way we say it in spanish when you have a beautiful meal ¡Buen Provecho!❤

@@doloreskrisky1670 I don’t see a problem with the color. But I know that some people say a brief blanching does set the color. You could also try using a big wide saute pan that gives the greens space.

Actually grew my own escarole this summer and did not know it was a favorite of deer and groundhogs---managed to get at least enough for one large pot to freeze. Trying again this fall in a small, fenced area. Hoping it goes better this time around!
Fagioli is the word I think you are looking for. It is pronounced differently in Northern vs. Southern Italy. This man is straight off the boat Italian, btw, as most of us can hear. Think he doesn't know how to write/spell/pronounce Italian words? REALLY?

Not as tasty as escarole. But.... I try. Am totally Italian and at times is hard to get accostumed to this life style. Even after all this years. But thank you for reminding me to look at my typing more closely.

Beautiful. I don't cook the escaeole in water. Instead, i saute it with the onions and garlic, with the lid on. Escarole has lots of its own water.
I also sautée the escarole, but sometimes it turns an unappetizing grayish color. Do you ever have this problem?
