    I'm Italian this brings back memories in my younger years long time ago i can smell the aroma in the kitchen now as my mother prepared this simple dish i once lived in the boston area first generation we had this meal at least once a week in the winter it's a plant food vegan vegetarian lots of nutrition and you can make it into a soup using chicken stock or just out of the pan into a bowl we had it from the old country liked it best this way with hard italian bread better still stale bread simply delicious ...You can have a side dish of pasta if you wish if you want...

    I love this man, he reminds of my grandfather and great uncles! My mother learned from them and thier wives....may they rest in peace!. WHat an awesome combination. Where else will you find a youtuber who features escarole? My mother used to make what she called escarole soup, which actually was a variation on classic Italian wedding soup. Super delicious, maybe my favorite soup of all time! Salute

    Pasquale, I made your escarole n beans (white version) tonight for the first time in my life. It is delicious. I did an overnight soak of the beans method, I paid a little extra for the chicken bone broth obtained from the freezer section rather than the stock stuff on the store shelf. I used a-lotta-gahrlic-ovah-heere! I also toasted the bread under the broiler brushed with olive oil and rubbed them with garlic. This recipe was built for dipping a quality bread. Anyways, thank you for another delicious and fun to make recipe. FYI, I was going to turn on the radio to help me get the dishes done but, I was making my own music and finished the dishes in record time 🕢🤣 In fact, if I closed my eyes and just stood still and listened, it sounded like the whole Beppe Cuomo Orchestra was in my kitchen doing the dishes!🤣🎶 Cin-Cin ah-salute!🥂

    This looks great perfectly clean Escarole using Dry Beans which is a plus. I love Hot Peppers 🌶 the hotter the better. You used onion and garlic with some picante The bread looks amazing . This is a great meal anytime.
    The way we say it in spanish when you have a beautiful meal

    Beautiful. I don't cook the escaeole in water. Instead, i saute it with the onions and garlic, with the lid on. Escarole has lots of its own water.

      I also sautée the escarole, but sometimes it turns an unappetizing grayish color. Do you ever have this problem?

      @@doloreskrisky1670 I don’t see a problem with the color. But I know that some people say a brief blanching does set the color. You could also try using a big wide saute pan that gives the greens space.

    When onion is done,can you add little crushed tomatoes before adding escarole,because I all ways made it with tomato,delicious.

    From NC, formerly NY. I need to try it this way. I make it the way my Nan did, in thin red sauce loaded with garlic in olive oil and black pepper.
    Actually grew my own escarole this summer and did not know it was a favorite of deer and groundhogs---managed to get at least enough for one large pot to freeze. Trying again this fall in a small, fenced area. Hoping it goes better this time around!

    It is not fasulla. It is favioli in Italian. The
    Ward fasulla means. Useless.

      Fagioli is the word I think you are looking for. It is pronounced differently in Northern vs. Southern Italy. This man is straight off the boat Italian, btw, as most of us can hear. Think he doesn't know how to write/spell/pronounce Italian words? REALLY?

      @@thewickedwitchofse8998 yes , you are correct. It is fagiolo for singular and fagioli for plural. typing error . I do cook those often. But here in Arizona is not easy find. So I try Bock Choi. Not as tasty as escarole. But.... I try.
      Am totally Italian and at times is hard to get accostumed to this life style. Even after all this years. But thank you for reminding me to look at my typing more closely.
