Yay, ATK! Thank you for bringing back the bumpers to Cooks Country recipe segments. The clipped editing you’ve tried recently was super jarring. So much more enjoyable in the original broadcast edit. (Still miss the recipe recap, but ok.)
Made this today with some farmer's market beets. Amazing! Since it's in the 90s today and I didn't want the oven heating up my kitchen, I first steamed them in the instapot for about 5 minutes then roasted in the air fryer for about 10. My new favorite beet recipe 😀
Such a better viewing experience with the intro back, helps set the stage for the dish. Thank you for bringing it back! Would love to see the outro recapping the recipe, it's nice to have those big takeaway tips.
I love beets and even love the greens. Both with butter and a dash of salt. Pickled beets are scrumptious!. This recipe looks great for a special holiday dish. Thank you.
I love beets, I've never thought of cooking them any other way than steaming, boiling or pickling them. I don't know why it hasn't crossed my mind, but I suppose I just was happy doing it the way my Mom did. Thanks, I'm going to give this a try.
When I cook and roast beets I wash them but never peel. I also cut into wedges. Spritz with EVOO, salt, pepper, roast on parchment paper. Can add honey, dijon mustard, and balsamic and drizzle. 375 for 35 to 45 minutes. Tasty. I'll have to try the lemon-tahini dressing. That's new! I like mine topped with goat cheese or crumbled gorgonzola!
In a pinch!!! I Love beets as well as my 17 year old son, still I drink Vodka, and was tired of other traditional mixes. If you don't have time to cook beets, and have to buy canned ones, this is perfect!!! When I open a can of beets I drain the juice into a GLASS...ha! add ice, and 1 and a half shots of Mr. or Mrs. or Ms. ha! Vodka wow!!! Then I fill the can with tap water, put it in the fridge, and of course you were wearing gloves, the beets with little time product another glass of wonderful juice for a cocktail!!! Then you heat up the beets in the can, bake, or roast them for the same purpose you already projected without the steaming part.... Always love ya. Robert
Thank you so much for putting the intros back for the individual recipe videos! It’s a little thing, but it makes for a much nicer viewing experience. 🎉🎉🎉
Steam, pressure cook, or roast the traditional way. Peel and cut them after cooked, then caramelize them in a skillet. You get the same result without having to scrub the scorch marks out of your baking dish.
@@oceanwonders Cook them thoroughly first. The caramelizing takes only a few minutes. It’s hard to overcook beets. They have a wide window for done-ness.
I like beets, but I always just go straight for the canned ones and put them in a salad or smoothie. I might have to give this one a try. DO NOTICE THE PLASTIC CUTTING BOARD. Good idea. I'd never want to risk a wood or bamboo cutting board getting permanently stained by beets, as that cutting board is essentially part of my kitchen decor. I've read that if your board is well oiled then beets shouldn't be a problem. I'm not about to take that chance.
I've found that recipes that sound like they won't work often taste the best, which means this must be entirely next level because it sounds bat $hi+ crazy.
This video raises the question that has plagued mankind since the Ancient Mesopotamians recorded it on a clay tablet: “who in their right mind would eat a beet?”
@ssb907 Not even close. Do you have tastebuds, or are they crippled by cigarettes? I LOVE beets, potatoes, turnips, rutabagas but not carrots. Not a one of those things tastes like the others to me.
This is not a way to roast beets. *This is a casserole.* She talks about roasted equalling steamed, yet she puts the beets in water!!! I roast beets by putting them in the oven. No peeling. No foil wrap. No steaming.

the combination of the beets with tangy tahini would be so heavenly
I boil my peeled beets & roast in butter. Can’t imagine anything being better!

Can't wait to try this! Thank you Christine!

I'd highly recommend Rukmini Iyer's beetroot, chickpea and coconut curry if you're looking for a really new and interesting way to cook beets too!
I'm always on the lookout for some different ways to make beets and this looks fantastic! Thank you!
I’ve made this recipe multiple times. We love it so much ! It’s easy and so beautiful! Only thing I dislike is washing the baking dish afterwards.
Now give us the best/easiest way to clean the pan!!!!!👍
I thought that, too!
This recipe is inspired by the Palestinian/Syrian/Lebanese cuisines. We usually mash the beets and make humus with them.
That sounds delicious!
@@adedow1333
Yes it does.
Never thought about mashing them. Thanks
5:15 Dressing: 2 Tbsp Lemon juice, 2 Tbsp Tahini, 1 Tbsp olive oil, 1 Tbsp water, 1 tsp minced thyme, 1 clove garlic minced, 1/4 tsp salt, 2 tsp sesame seeds toasted on top.
Looks yummy…can you use frozen beets thawed for this recipe?
Amazing recipe!!
Just made these, AMAZING!!!🎉
Looks amazing

I love beets I want to try the roasted
A beer lover from way back!!
Me too. But how do you feel about beets? Lol.😊 Be well.
YUM! I love beets in any form, unfortunately, I'd be making them only for me, no one in my family likes them..🙁
Great recipe.
Very very nice! TY
Thank you!
Beautiful ❤
I will totally enjoy trying this recipe with some Jerk Chicken and some rice. Yum!

Caramelize them even after already fully cooked? Or should we slightly undercook?

@@edzmuda6870 Thanks
I love beats but I always think I’m dying the next day 🤔😂😂😂💩
😂😂😂 same here.😮
Ha! I’m always like 😮 then, Oh Yeah… I ate beets. 😂
This looks amazing. I love beets! But who's washing that dish though?😅😅😅😅
Who's gonna clean that pan Christie
Maybe this will make beets taste good!
I was thinking the exact same thing! 😅 I've never been a fan of beets.
@@eklectiktoni Maybe it's time to give beets a chance! I haven't tried them in a long time.

whenever I cut up beets my kitchen looks like a crime scene

Could the beets get a jumpstart by using a pressure cooker?
I never peel red beets. I wash, season, wrap in foil, bake like a potato & enjoy all of that deliciousness. Your welcome!
Do you have to peel beets when roasting? I never have and didn’t find the taste or texture offensive. Why would one have to?
Yum!! 😋😋
I've never peeled my beets, just wash them.
I put mine in the crockpot
Did anyone catch how much Tahini she put in? Thanks
This building is just an expensive bathroom
I bet that pan is still soaking
Don't worry that burned up casserole will clean right up 😓
Bridget ain't presenting no recipes for beets lol
Aren’t all the minerals on the skins
This video raises the question that has plagued mankind since the Ancient Mesopotamians recorded it on a clay tablet: “who in their right mind would eat a beet?”
My daughter says they taste like dirt to her too.
It's great that you used olive oil and not garbage seed oils like canola and vegetable oil.
Why are Americans so round 😂😂😂
I want to like beets, I really do, but I don't enjoy eating dirt.
Try sous vide. Game changer.
But I bet you like potatoes and carrots…same thing.
I agree. Beets taste like dirt.
Try sweet pickled beets! No joke that's how I started and they're amazing! You get all of their sweetness and goodness with no dirt flavor.❤

I don't like beets
Love beets, but 4 tbsp oil+tahini for 2 pounds veg is to much of fat.
Beets taste like an open grave…
Open graves are pretty tasty then.
I laughed too hard at that!
