Beet greens and beet stems are the best part of beets. I saute the greens to use on sandwiches, chop and saute the stems separately they're a fantastic side dish. You're really missing out if you just toss the stems and greens.
I used to roast beets by wrapping them in foil and roasting until soft. When cold I would slice them and serve on greens with goat cheese and pickled onions. Good stuff.
Try baked beets with pineapple and a little brown sugar. Beets with whole canned cranberries is also good, or make the cranberries from scratch if you like

They're best pickled. Believe me. Par boil them, do not throw away the water you use for boiling. They need to be peeled before boiling. Chop them up to your like. Not too small. Place them in a jar, add some vinegar, garlic along with the water you used for boiling and cap it. Wait for a few days and they're ready to eat. I suggest using them in salads. Full of vitamins and minerals.
You can ferment beets into pickles in a salt brine (1 tsp salt per cup of water). After a week or two, depending on the temperature of your kitchen, the beets will be tangy and pickled. Great with sliced onions, celery, and/or other vegetables. Check recipe videos on youtube.

I enjoy beet hummus using salted, roasted beets, cumin, roasted walnuts, sesame oil, olive oil, lemon juice, and apple cider vinegar. Mega yum with hot pita or crusty French bread.
Thank you for sharing your recipe- I love beets as well ! I mostly roast them in ghee,which has a higher and longer temperature tolerance and gives a nice flavour. I find that it is better to salt them late or after in the cooking process, as they will release less water and the beets will roast rather than stew. My favorite way to eat them is tossed with salt,pepper,a bit of balsamic vinegar and topped with lashings of sour cream!

This looks fantastic. Usually I just cut the ends off and boil the beets whole until you can pierce them with a fork. Then I let them cool, peel off the skin (don't like the skin) then slice and eat. I eat them plain with no seasoning, but I'd love to try this recipe. That would be a nice recipe for golden beets as well, which I adore. I can't find them very often, though. But when I do see them, I snatch them up. They're so good.

I dehydrate my beet greens also spinach, parsley, any good greens then I powder them in the blender for immune and vitamin boost for way less expense. Love roasted beets.
Grilled beets have the best flavour. When they're boiled, all the nutrients end up in the water. My fav variety of beets is Cylindra. They're long, cylindrical in shape, crisp and don't get woody & are just perfect for canning, if you like pickled beets.
I bet these are great. I've cooked beets on the bbq like you would a potato and they came out great aswell. I think people might eat more beets if they discovered how good they can taste.
Try roasting in balsamic reduction and salt and pepper in a foil pouch. Make the reduction yourself with balsamic vinegar boiled till it reduces or buy it in grocery stores. Bake. 350. Or if you want toss in olive or sunflower oil first. Yum

I roast in olive or avocado oil. No spice. I love the natural sweetness that comes through.
I heard olive oil can't take heat and gets rancid. Maybe add olive oil after cooking for taste.

In an organic garden without pesticides, the leaves get heavily eaten by insects. That's why I removed them.
Also, a combination of beets & broccoli cooked in that style is fantastic.
I'm not a fan of pickled beets but these fried ones look really good. I'll give it a shot in my air fryer.

Nice! I cook beets similarly. At the end however, I mix a 50/50 ratio of honey and balsamic vinegar and toss with fresh thyme to cover the beets.
