    Almond Orange Cake

    Ingredients
    Here are the basic ingredients that you will need to make Almond Orange Cake:
    4 large eggs
    3/4 cup (150 g) sugar
    1 large orange, zest and juice (about 1/2 cup)
    1/2 cup (120 ml) vegetable or light olive oil
    1/8 teaspoon almond extract (or orange extract), optional
    3 cups (300 g) almond flour
    1/2 tablespoon (7 g) baking powder
    2 tablespoons sliced almonds
    powdered sugar for dusting
    Instructions:
    To make Almond Orange Cake, simply…
    1. Preheat the oven to 350°F (175°C). Line or grease an 8 or 9-inch round springform round pan.
    2. In a large bowl, add the sugar and the egg yolks (save the egg whites in a separate bowl for later). Beat with a hand mixer or by hand until light and foamy.
    3. Add the orange zest, orange juice, oil, and almond extract (or orange extract) if using. Beat for two more minutes.
    4. Add the almond flour and baking powder and mix until combined and smooth.
    5. Beat the egg whites in a separate bowl until firm. Gently fold into the cake batter.
    6. Pour into the prepared pan, level, and sprinkle with almond slices. Bake for about 40 minutes or until golden and set. Test with a toothpick for readiness. Let cool, gently remove from the pan, and serve with powdered sugar.
