    शाही पनीर और मिस्सी रोटी l Sahi Paneer With Missi Roti l Special Lunch Combo l Kitchen Delites
    Recipe for Shahi Paneer without kaju and cream
    Ingredients:
    - 400 grams paneer, cubed
    - 2 large onions, finely chopped
    - 2 large tomatoes, pureed
    - 2 green chilies, slit
    - 1 tablespoon ginger-garlic paste
    - 1. 5 cup milk
    - 1-inch cinnamon stick
    - 4-5 cloves
    - 1 black cardamom
    - 1/2 teaspoon turmeric powder
    - 1 teaspoon red chili powder
    - 1 teaspoon coriander powder
    - 1 teaspoon garam masala
    - 1/2 teaspoon sugar(optional )
    - 2tbsp shahi paneer masala
    - Fresh coriander leaves, chopped (for garnish)
    Instructions:
    1. *Preparation:*
    - Cube the paneer and keep it aside.
    Slice the onions
    Slice the tomatoes
    2. *Cooking:*
    - boil the onions, tomatoes, green chilies, grated ginger, garlic and whole spices in a pressure cooker for 3 whistles
    - Once cooled discard the whole spices and make a paste in blender.
    3. *Spices:
    In a pan heat 2tbsp of oil add the gram flour and cook till it os aromatic
    Then add prepared paste.
    - Add turmeric powder, red chili powder, coriander powder, and shahi paneer masala . Mix well.
    - Cook the mixture for a few minutes until the spices are well blended.
    4. *Paneer and Gravy:*
    - Add the milk and mix well.
    - Add sugar and garam masala.
    - Let the gravy simmer on low heat for about 5-7 minutes.
    5. *Final Touch:*
    - Add the paneer cubes and gently mix to coat them with the gravy.
    - Cook for another 2-3 minutes to let the paneer absorb the flavors.
    6. *Garnish and Serve:*
    Missi Roti in an electric tandoor:
    #Ingredients:
    - 2 cup whole wheat flour
    - 1 cup gram flour (besan)
    - 1/2 teaspoon turmeric powder
    - 1/2 teaspoon red chili powder
    - 1/2 teaspoon carom seeds (ajwain)
    - 1/2 teaspoon cumin seeds (jeera)
    - 1 tablespoon chopped fresh coriander leaves
    - 1medium onion chopped
    - 2tbsp fresh curd
    - 1 green chili, finely chopped (optional)
    - 1/2 teaspoon salt, or to taste
    - 1 tablespoon oil or ghee
    - Water, as needed for kneading
    Instructions:
    1. *Prepare the Dough:*
    - In a large mixing bowl, combine whole wheat flour and gram flour.
    - Add turmeric powder, red chili powder, carom seeds, cumin seeds, chopped coriander leaves, green chili (if using), and salt.
    - Mix all the dry ingredients well.
    - Add oil or ghee to the mixture and rub it in with your fingers.
    - Gradually add water and knead the mixture into a soft, smooth dough.
    - Cover the dough with a damp cloth and let it rest for about 15-20 minutes.
    2. *Preheat the Electric Tandoor:*
    - Preheat your electric tandoor according to the manufacturer’s instructions. This usually takes about 10-15 minutes.
    3. *Shape the Rotis:*
    - Divide the dough into small equal-sized balls.
    - Roll each ball between your palms to make it smooth.
    - Dust a rolling surface with some flour.
    - Roll out each ball into a round, even, and thin disc (about 5-6 inches in diameter).
    4. *Cook the Rotis:*
    - Place the rolled-out roti on the preheated tandoor plate.
    - Cook for about 2-3 minutes, or until bubbles start to form on the surface.
    - Flip the roti using tongs and cook the other side until it develops brown spots and is cooked through. This should take another 2-3 minutes.
    - Repeat with the remaining dough balls.
    5. *Serve:*
    - Brush the hot Missi Rotis with some ghee or butter if desired.
    - Serve hot with yogurt, pickles, or any curry of your choice.
