Ultimate Eggless Vanilla Swiss Roll Recipe

- Basic Eggless Vanilla Swiss Roll Cake - This is quite a challenging cake for me. I tried 4 rounds with different recipe ingredients like flaxseeds, I finally found the easier way with easy ingredients. This recipe will give you super soft cake texture, easy to roll, and minimal cracks. Don’t be discouraged if you did not successfully roll it up as it takes some practices. Rolling is indeed challenging but I hope I’ve given you sufficient tips on the rolling part. Eggless is unlike egg swiss roll, it takes some patience here. I hope you are inspired to give it a try. Ingredients:
• Eggless Vanilla Cake Sheet
(I used 26x36cm pan) - don’t use anything smaller than this, as it will affect the thickness of the cake sheet (I will explain why below)
180ml [¾ cup] milk
1 tbsp white vinegar
180g [1½ cup] cake flour
1 tsp baking powder
¼ tsp baking soda
120g [½ cup] plain yogurt
100g [½ cup] fine sugar
85g [¼ cup + 2 tbsp] oil
¼ tsp salt
1 tsp vanilla extract
1 tbsp sweetened condensed milk
¼ tsp tumeric powder (optional)*
*remark: the turmeric is to give the cake some colour, otherwise it will be very pale white. This is optional.
• Cream Frosting
180g [¾ cup] whipping cream
60g [3 tbsp] condensed milk
syrup
[1 tbsp sugar + 2 tbsp hot water]
Instructions:
• Eggless Vanilla Cake Sheet
1. In a glass, mix milk and vinegar. Mix well and let it rest for 5 minutes.
2. Sift the flour, baking powder and baking soda. Set aside.
3. In a small bowl, add condensed and turmeric powder. Mix until well combined. Set aside.
4. In a large mixing bowl, add yogurt, sugar, oil, salt, vanilla extract and turmeric mixture. Mix for 1 minute until well combined.
5. Add in the milk mixture in a few batches, alternate with the sifted dry ingredients. Mix to combine.
6. Add in the sifted dry ingredients in a few batches, alternate with the milk mixture. Mix until combined.
7. Transfer the batter onto a 26x36cm pan. Try not to use a smaller pan. Use a scrapper to spread the batter evenly. Tap the pan on the table to release air bubbles.
8. Bake them in preheated oven at 180°C/355°F for 15 min or until the inserted skewer comes out clean.
9. While the baking is going on, prepare the cream frosting as you’ll need to standby using it later.
• Cream Filling
1. In a large mixing bowl, add whipping cream and condensed milk.
2. Mix on medium or low speed until it is stiff, do not over mix.
3. Refrigerate for 5 minutes while taking the cake sheet out from the oven.
• Roll the Cake
1. As soon as the cake is out from the oven, remove from the pan and parchment paper.
2. Place the cake sheet on a clean piece of parchment paper.
3. Let the cake cool off a bit for about 8-10 min.
4. The cake will be cool off.
5. Trim one side diagonally, this will be the end part
6. Brush the surface with syrup.
7. Spread the whipping cream. Spread a gradual height, one side more and gradually less on the other side, like a slope.
8. Roll the start point (the part which has more cream), gently roll up. Once you’ve roll up the starting, you’ll need to go fast to continue rolling up to prevent cracking. Remember this is an eggless cake sheet, it's normal that it has some cracks along the way.
9. Once you’ll roll it up, use a scrapper to fasten the roll as tight as you can.
10. Fasten with tapes to hold the roll in shape.
11. Wrap with cling film, refrigerate for at least 1 hour.
12. After chilling for 1 hour, you may slice your cake.
FOOLPROOF TIPS HOW TO ROLL THE CAKE SHEET
1. Try to bake the cake sheet not too thick, about 1cm will be just nice. Too thick to tend to break or crack a lot.
2. Do not over bake the cake. Dry cake will most likely not work as it will break apart as you roll.
3. Roll the cake sheet while it is soft. That means try not to let it rest for too long.
4. Spread the frosting as soon as it cools down, roll it and then wrap up tight, refrigerate immediately. Do not try to roll the cake without the filling, and open up the roll, it will break apart easily.
5. Fill the cream one side more and the other side less in a gradual height like a slope. The starting part that has more cream is so that the cream can support the roll at the beginning because the starting is super fragile. Once you get a diameter of the starting, continue roll up quickly to prevent cracking. It’s ok if there is some crack, as soon as you roll and wrap the roll tight, the cracks will be repaired as you refrigerate.

This didn't come so easy, Valentina. I tried 4 rounds with different combinations of ingredients including flaxseed. Flaxseed is just too much work and hassle, I scraped that. Go back to my usual recipe. The rolling indeed need a little swift. If you take a close look, my cake actually had cracks, but the tight wrapping somehow could repair the crack after chilling it as well. Thanks for being here. This is the best Swiss Roll recipe I've found yet! What could I use as a substitute for yogurt?
You may substitute with buttermilk or sour cream, something thicker than milk. If you're a vegan, you can substitute with apple sauce or even mash bananas, or vegan yogurt if you can find. I hope this helps ☺️

I made this in chocolate version, replaced 30g of flour with cocoa powder, left out the condensed milk and used applesauce instead of yogurt. It came out too soft and I could roll it just fine but when I cut it it crumbled a lot. It tastes delicious tho. I didn't try the non chocolate version yet so idk if the cocoa powder made it extra fluffy with the acidity or if the applesauce gave it extra liquid, gonna try it again with yogurt and see.
Good try, dear. But you definitely need to refrigerate well enough before cutting it. After cutting, you can leave it in room temp for the day for consumption
@@gracioustreatz7231 yes, I left it in the fridge overnight. I’m a vegan pastry chef and right now we are preparing the Christmas menu for our bakery and these roll cakes are traditional where I live atm, but not where I’m from so I’m not so familiar with them. Gonna need a few more tries to figure out how to make it work. Your recipe was a great start tho!

Any tips for avoiding too much browing .. my cake sheet is not coming in nice color
You can try putting your pan on one rack lower from the middle. Meaning if you have a 5 rack oven, put the pan on the 4th rack. If you have 3 rack oven, put it on the lowest rack. That way you'll avoid too much direct heat from top

The minimum pan size for a roll cake is 26x36cm. But if that doesn't fit into your oven, you may bake the cake sheet in 2 pans or 1 pan at a time. Then join the sheet together as you roll. It's pretty challenging I can tell you, especially for an eggless cake. But don't be discouraged, no harm to give that a try, practice makes perfect 😉

Yes you can skip. You can mix the tumeric in 1 tbsp of yogurt
If the cake flour I’m using self rising I still need to use baking soda? Or can skip tat?
Self raising flour only has baking powder. So you'll probably need the baking soda. Some people don't like the taste of baking soda, you can omit if you're just comfortable with your self raising flour 🙂

Yes, but yogurt is recommended. The other option is sour cream, or less preferable is buttermilk. It's the kind of yogurt like consistency we're looking for to make this possible because it has no eggs ☺️

No change if you want to use APF, same amount.

In this case it will be 1½ cup APF, remove 3 tbsp APF, then add in 3 tbsp cornstarch, then sift a few times. That's already your cake flour.
Instead of yougurt can I add buttermilk

Yes, instead of 180g flour, your can add 150g + 30g cocoa powder. You may omit condensed milk and tumeric (you don't need for chocolate flavor)

Hi. How much cocoa powder should I add if I want to make it chocolate flavor? Do I need to omit anything in the recipe?
2 to 3 tbsp (25g-30g) will be sufficient. The amount of cocoa powder used, just deduct the same amount from the cake flour ☺️

Just a doubt. Why do you add condensed milk? Is it for flavour or elasticity in rolling?
2 reasons:
1. to dissolve the tumeric evenly and easier than in liquid.
2. it's to sweeten and overshadow the taste of tumeric ☺️

Hii Fiona ..I baked it and it was looking so good it was so soft and light but when eaten it is sticking in the mouth .can you please tell me the reason what could be the reason?? I am so sad😔😔😔
If that's the case, it means your cake is probably dense. The wet ingredients make sure they are well mixed. When you add the flour, mix just to combine, do not over mix. If this is your first time, you'll probably experience some trial and error which is normal. Don't give up

I'm a vegan baker for over a decade. This is a very very common problem with vegan vanilla cakes. I know exactly what are you describing. I agree, it is terrible. The problem is that without enough protein, the sponge lacks the needed structure and density. Yes, softness is great however if it just turn into a wet mush right after we put it into our mouth, it loses its purpose. I didn't try this recipe so I can't comment. It looks great, especially since vegan vanilla roll cakes are almost impossible to make.
Hello, so that the roll does not break and crack, it must still be rolled up hot together with paper and left to cool!

Not too hot, just as soon as it cool down slightly. Maybe around 6-8 minutes. You can touch the cake, it is still soft. I have all the rolling tips in the description box
What can i use instead of condensed milk, its hard to find where i live 😕
Reduce canned coconut milk with sugar and let it cool.
