For those in the US, potato flour and potato starch are VERY different products. Use the starch to avoid a heavy loaf. For a rice substitute, I've used millet flour successfully in many recipes. It may alter the color a little, but is milder in flavor than most others. I'm going to try this with oat flour and see how it goes.

Thanks for the tips! Potato flour is readily available in Sweden. I haven't seen millet flour here only teff. Let me know if oat flour works.

Would white rice flour work as well? My mom's gluten intolerant but she has an even worse reaction to brown rice.
