Criminally underrated channel, keep it up. One unsolicited suggestion that I think would go a long way to improving the quality of your videos to have a more professional feel would better audio. Whether that's a better mic, mixing, recording space or all three.

Their selection and quality for the prices they have are ridiculous!

You can either heavily season the blanching water (1/4 c salt to 1 gal water), or season both the blanching and shocking water to prevent salt washing away. Both work

What does the whey do to the potatoes when you boil them?
I used it because I had it. It will add a slightly milky flavor and taste better than water, but I wouldn’t go out of the way to make it.

They whey is just a bi-product from making the ricotta. You can just use regular water instead.
