Hi Justin. I was in an awful accident in the military which forced me to medically retire in April of last year. After having my identity I had established in the Navy over the past 9 years torn from me, I went through a really tough time where I was trying to figure out who I was as a civilian. I started going to school and was not feeling the same fulfilment as when I was in the military, so I started poking around at jobs that I would consider to be fun and challenging. After coming across your channel and getting the feeling that cooking is something I could really enjoy, I reached out to my friend who is the executive chef at a well-known seafood restaurant and asked him if I could start out washing dishes for him. He threw me straight into the fire as a cook and since I started, I've been loving it and I feel the same fulfilment I sorely missed. Thank you for sharing your passion on UA-cam!
Your palate and familiarity with the effort and process that goes into these dishes translates well through your narrative. It's refreshing to watch someone that's been in the industry at high levels narrate their experience. Onward!

That duck and rice plate with the stone fruit looks amazing.

3:36 I've always found the differences in cultural preference for acidity to be very interesting. This dish sounds a lot like a traditional steamed preparation of fish in Taiwan and China, usually not served with any acidic accoutrement. I love your videos! It's great so see some insight into fine dining from the perspective of someone who knows how it's made.

No way - plenty of food at this meal, I couldn't finish the rice that was served with the duck dish, and I also didn't eat all of the bread served with the crab course.
