I don't have access to Oynx coffees, but I've been matching up what I get from the local specialty roaster with coffees of similar origin/process here and they've all been delicious! This one included. Cheers!

Saw there wasn’t an espresso guide for this. Do y’all not recommend this on espresso? Or would the other Kenya Gachatha (OT?) be similar enough to use that as a rough guide?
Having problems with this recipe. I’m at 3 on my ode with ssp burrs and still getting a total drain time of 2:30. I can pull manual espresso 9 bar shots at 2 on my grinder. Any suggestions?
The SSP burrs reduce the grind range by 200microns. I would still likely grind on 1 for the ssp Ode for this recipe. I'm quite surprised to hear that you are able to grind for espresso on the grinder as it's range is really not built for that. I would give 1-2 a try on grind setting for this V60.
This coffee is super interesting. I’m finding myself needing to grind reeeeeally fine to achieve the result in this recipe. Almost down to 20 on my Niche which is unheard of for a v60. And yet, that’s what it needs. Anyone know what about this particular roast/variety requires such a fine grind? Thanks! Love the videos as usual
It is quite a light coffee, which wants to drain quickly. 20 is still finer than we have used for the V60 as well, but we have only limited experience with the Niche. Have you calibrated yours, out of the box?

I guess my question had more to do with how the density, wash process, and bean contribute to grind size and where this coffee lies on that spectrum.
Just bought the Kenya Gathaithi AA and tried this recipe and yet was it was very sour and bitter/salty. I used a 10 on the Baratza Encore. Do you suggest a different grind/recipe for this bean? I thought it would be similar but flavor profile was not ideal. Thanks!
My Kenya Kiringaya beans drain really fast (under 2 mins) using the same 20 click on C40 and it has astringency. Do you think it's a channeling issue? Should I grind finer?

Just picked up some of these beans, I've grounded at 17 on the Baratza Encore and draw time is close to 5mins. Any ideas?
when i pour 250 g water i get 200 g coffee out, is it common or… seems like a lot of water gets stuck in the coffee bed?

If it’s under 2 minutes definitely grind finer. Even though there both beans from Kenya grind sizes can be different.
