Guga, I made this today. Never tried SV chicken as it always scared me, but I have to say this made the most amazing fried chicken I have ever made, let alone ever had. AMAZING!!!!
I just replicated this recipe as carefully as I could. I'm from Memphis so I'm pretty familiar with Nashville Hot. This recipe is damn good, but my personal tastes are more heat and less sweet. The next time I try this I plan to use hotter chillies and just a touch less brown sugar. Cayenne pepper is too mild for this recipe. Still tastes great though!
Hey from Nashville!!! I gotta tell you. EVERYONE has hot chicken around here but Hattie B's has perfected the legend that Prince's started 100 years ago. The reason I wanted to leave a comment is to tell you that I found that adding cayenne pepper to your Guga's Rub make's it really close to Hattie's seasoning. That's how I get my fix at home. You definitely need to try it that way too. Angel is right... IT'S ADDICTING!!! I live here and go for it at least 2 X's a week. After watching this, I'm heading for lunch at Hattie's. Let me know when you come to town. Would love to meet the man that made me go sous vide and changed my kitchen forever!

The crazy thing is that at a lot of hot chicken places this recipe would probably be considered mild. I've seen recipes that double the cayenne pepper for "medium" heat. Also, hot chicken is super good with ranch.
I made this tonight...it was delicious -- the method of making the chicken worked great, little bbq sauce for the boys, teriyaki for the wife and the hot oil for me.... dear god it was great. Thanks for another awesome recipe.

It's easy to make great food when you are starting with Wagyu prime rib. Making something delicious from everyday ingredients like this is how we know Guga has real chops.
For even more heat, add the spices to the flour when breading it, just leave the sugar out. We want to fry our chicken, not candy it. I'd also try to fry it in a pan with clarified butter just to add that nutty flavor to the mix.
I just bought a closed down restaurant Guga. I plan to not only to continue my very close review of ALL of your "Stuff", I will be following your instructions in duplicating your most excellent items. After my tasters vote on the results and agree, I will be adding some of these items to my menu from your cooks, so keep 'em coming "Bro"! (I also have a "Super Taster" like Angel ;)
Guga, I was inspired by this and made some delicious Nashville Hot tonight. I have not yet made the jump to sous vide, but hope to soon. I love your channel!
Just made this and I thought it was absolutely delicious! There are a few things that I'd like to note, and would appreciate any feedback. (Note that this is the first time I've attempted fried chicken of any kind). 1.) 2 cups of milk in the wet mix seemed a bit much so I cut it down to 1 cup. Even so, I still had ample left over which had to be drained after. 2.) I found that I had to double-dip in wet mix and flour to get a real good "breading". 3.) The oil / spice mix was great, but next time I will use literally HALF of everything listed in this recipe. I basted generously and still had a TON of spice left over which also had to be drained. 4.) As a fried food noob, I didn't really know what to do with the left over oil. I tried to strain it to keep for next time, but it was just too dirty. In the rubbish it went. With all that being said (lol), this was one of the tastiest chicken dishes I've ever made! However, I am not sure I will make it again in a hurry due to the amount of wasted ingredients.
I reuse my oil at least a dozen times. I strain in a sieve with cheesecloth laid in it while the oil is still warm but not hot. I use it around a dozen times for fries and chicken then use it once for fish, then it gets thrown out. The first time oil is used, it doesn’t have the Same flavor as the second and later uses. It’s not any good the first use.
Next time try a pickle brine marinade prio to breading and sous vide in the pickle juice. Its amazing. Adds a slight pickle flavor and makes it super juicy.
If you ever go to Nashville, check out Prince's hot chicken. The original Nashville hot chicken place. It's so delicious, and still family owned nearly 80 years later!
If you ever get to Nashville TN, go find a Hattie B's the best Nashville Style chicken in the city. Prince's is good too (it's actually the original) but their chicken gives you more heat, less flavor. Hattie B's is great flavor over top of the heat, makes you crave more chicken.

I would guess around 375 and time shouldnt matter too much since chicken is already cooked so till crust is nice and brown
