At first I thought why am I watching this because I never have much room in the freezer I share with two other flatmates. But this way of cooking potatoes looks so convenient and I'll have to try it. Thanks!
This reminds me of all the onions I chop at my restaurant job LOL. Great ideas, thank you! I am working on preserving foods because we are doing a big garden this year - should be interesting!
Unless the onions are really grungy, I save the peels and use that for my stock. Saves me from using an onion, and give the stock beautiful deep colour. And like you, I have very little room in my freezer, so while I do have some frozen onions I usually dehydrate them to save space. And since I like to blanche them first, I like to use the blanching water to can up some dried beans for soups or casseroles. But I have to admit that freezing them would eliminate the need to blanche. Will work on getting some freezer space and try that the next time.
Yes, I save my onion skins in a freezer bag as well. Great idea about the blanching water for the soups and casseroles. I've never blanched them as they have been perfect without needing to and it saves me an m extra step.. I also have dehydrated ones as well and I like to use them for a range of different uses. Onions would have to be right up on my list of most used vegetables.
I dehydrated a lot of chopped onions, chopped celery and shredded carrots to make them up into a mix to have already to use. I also powder some of the mix which is great to add to recipes and smooth sauces…. Often I wash 5 lbs at a time for two of us for a week…then put in my instant pot and quickly cook them……the skins rub off with a knife easily and I have them ready for potato pancakes, smashed taters, cottage fries in bacon grease and potato salad. My larger instant pot can hold 10 lbs and after cooking them I put them in freezer bags sliced with dehydrated peppers and onions and some oil …shake and freeze ready to cook …..my air fryer is such a blessing to have for fast fries also.

I am so enjoying your channel. Just the two of us but ive chopped up all the onions i have and will do some potatoes too. I am saving money by not going to the supermarket e.g ran out of tomato sauce so found a recipe i used canned and fresh tomatoes. If i had gone shopping that would be $20 at least spent but i have a lovely pot of sauce bhbbling away. As an older home cook it is great to have purposeful things to do. Thank you very much for your valuable ideas.

A little tip from the voice of experience: don't put a whole bunch of potato peels down your garbage disposal. The starch makes them clog up your pipes 😢. Instead, gather them out of your sink and compost them or throw them away in the trash.
Same, I've got a little Haeur fridge and my little freezer is on top, I just pop my stuff on anything that is flat and plastic and it does the trick. In fact, Ive just finished flash freezing some bananas before popping them in a recycled ziplock bag.

Which dicing unit are you using? The one I bought busted the blade on the first use.
Have you ever added peppers to the mix? Would the peppers need blanching?
I personally don't like peppers, but I've done just the same for pizza toppings for other family members. There is no need to blanch first.
