Trini Coconut Bake Recipe

  • Coconut Bake.
    Coconut bake is a traditional bread made with coconut and other ingredients that you bake and enjoy with Cheese, Stews , Saltfish etc. You can basically enjoy this soft coconut bread with anything it's that good.
    Coconut Bake Recipe
    5lbs flour
    1/2 Cup Brown Sugar
    2 Tbsp Yeast
    2 Tbsp Baking Powder
    1 Tbsp Salt
    8 Ounce Room Temperature Butter
    4 Ounce Room Temperature Crisco /Shortening
    1 1/2 Dried Coconut Grated or Blend
    I Tin of Carnation Milk
    Warm water for kneading the dough
    Add all the dry ingredients into the bowl mixing well. Then add in the coconut and mix. Add in the room temperature butter and crisco and continue to mix. When finishing mixing add in the milk and beging kneading continue to add the water into the dried ingredients until you get the dough into a nice consistency. Allow to rest for about 40/45mins in a warm area. When the dough has come to a rise, begin placing it into your greased pans unless they are nonstick pans you don't need to grease. Allow to rest for another 20mins while you preheat your over to 375°. After 20 mins begin placing your bake into the oven and let bake for about 20/25 mins. When finish your bake should be looking golden in color. That's when you can enjoy your coconut bake right out of the oven.
    This Recipe will give you about 6 round 9inch bake and 6 smaller ones. If you don't wish to make so much coconut bake simply cut your ingredients into half and follow the same method.
    Feel free to put the balance of your Coconut Bakes into ziplock bag and put into the freezer until you feel to eat bake again. Simple take out thaw and you can reheat your oven and out the bake in for about 5/7 mins and you have fresh bake again just like that.

    Made this and the texture was on point , I had to make a 8 hr drive so the day before , I kneaded my dough , after the first rise I punched down and made 8 dough balls and froze them , then placed in ziplock bags . When I got to my destination they were defrosting. Then placed them in the pans and baked , came out wonderfully ! I needed more coconut flavor according to the tasters ..lol but not a piece was left ! IT was a great wintertime snack ,sitting around an outdoor fire and catching up with family and friends . Thanks for this great Recipe ! Everyone knows about your channel now ! Happy baking !

      Awwweee thku lovely I do the 5lbs the extra going well wrapped into the freezer let me tell u when ready to eat bake again take taw the bake out and heat your over on 270° and just warm up for about 10mins or to your liking let me tell u it's just as if u make them fresh lol 😊

      Like I need to get back on here and share my recipes. I have lots and lots, my skill in cooking with flavor to enjoy a meal and lick your fingers and leave your taste buds wanting for more is really authentic 😋, but being a single mom and a supervisor doesn't really give me much time to stand and prep, flim, cook etc lol.     I only use coconut milk,never carnation milk.I learn from the old school so I never change it.Now there is coconut milk in powder and liquid form I use.

    Do you brush butter on top how it comes out with that nice color mines always white looking and I don’t want to leave them in oven over baking time. I now see what I did wrong I had oven on 350 degrees next time I will put it at 375. Thank you

      I'm sorry for the late reply gosh super late reply. Yes I base butter on top of the bakes keeps the top crust as I like to call it soft and nice 😋

    How much total water or liquid?

      Just add water till you get all the dry ingredients mixed together, till you get a soft, not wet soft warm manageable dough

      I do because I freeze them and whenever I'm ready to enjoy them I thaw them out and enjoy them and yes you can add half bag of the flour and 1pk of yeast 1 1/2 tlbs baking powder
