      I can't understand people sometimes, It takes a lot of effort and organization to put out a video on youtube. These "NEGATIVE NANCYS" need to keep their chatters shot if they don't having anything good to say. Your channel is teaching about the food and culture of T&T, and teaching involves talking. I'm from Trinidad myself but live in the NYC area and I really appreciate videos like yours. I was so delighted to find another refreshing "Trini food channel" where just about everything is authentic . Keep the videos coming, I will continue to watch and even request recipes myself.

    My grandmother was a boss cook, she could of make anything, roti, dhalphorie, coconut bake, any soul food, she was old school, when she cook the neighbors would come with their plates by our fence for food. She used a cold pot to make her soul food, was told by her the original coconut bake is better made on a cold pot, because the smoke from the cold pot gives it a special taste. I saw some other coconut bake videos on UA-cam but it's not coconut bake. They remove the brown part of the coconut which is a vial part of the coconut for the bake.

      Update: since Friday I've made 2 coconut bakes.
      Ms.Chamion, I've learned many things from you, even though I already knew how to make coconut bake. I tried it your way! First, I used cold butter. Two, I wrapped it in plastic wrap, and three, I used parchment paper to line my tray. Let me tell you the difference and what happened with the cold butter - my dough was fluffier, and by using the plastic wrap like you instructed, I cut it into four pieces when it was done. And as we used each piece we unwrapped it and the others remained tight so it remained fresher longer rather than unwrapping the entire bake each time we needed a piece, and exposing it to the air to dry out. Today is Wednesday, and let me tell you the bake is still soft. It is moist and as fresh as ever. I wrapped it, like you suggested in the plastic wrap and I store it in the microwave and all we have to do on mornings is cut a piece and we just give it a light toast in a toaster oven with a little butter and my husband has been having it with smoked Herring and eggs delicious. The difference with the the parchment paper, the bottom of the bake was not as hard. Ms.Chamion, you are a great teacher, and I am here to learn.

    Thanks for the video. I will surely try your recipe. Would it be better to use less water in order not to use so much extra flour ihan requested in the recipe? This is something that I have been noticing on UA-cam. A lot of extra flour used.

      islandgirl3330 hi the pleasure is always my own! Thank you for watching & your kind comment to answer your question I won’t suggest that you use less liquid baking is a science/formula one off move & it’s rapid decent I hope my reply helps if you want to use less flour you can just add more if & when necessary I happen to not like using excess flour also I hate the look on final bake products unless it’s artisan breads so I got you 🙂

    Hello, you are awesome! You used 4 cups of flour to start, but added more at the end. How much additional flour did you use? And, can I used packaged dried coconut?

      GlobalBytes hi thank you for watching & your kind comment very much! It’s greatly appreciated 🙂 to answer your question I’ll say by estimating it’s between 1/2 to 3/4 cup & sure you can use packaged dried coconut it might not be as fresh & highly flavored as if you did it yourself also you can use the powdered package powdered coconut only thing is you won’t see the beautiful coconut pieces in the dough of course which is what makes coconut bake what it is in my opinion I hope my reply helps..................

      This coconut bread is absolutely delicious and moist. I did use shredded sweetened coconut, Chamion, but used 4 tbsp of sugar instead of 8. Perfecto! Trying to decide which of your recipes I’m going to try next. Be well and stay sweet like this coconut bread!

      GlobalBytes hi ok you did use the shredded sweetened coconut wow! I think to myself that it won’t be that big of a deal & I loved how you used less sugar because it was sweetened coconut that was brilliant I’m thrilled to hear about the results you achieved 🙂🙂 be sure to let me know how the next item you try turns out whenever you do follow my recipes again 🙂🙂

      @FoodByChamionWilliams  7 місяців тому

      Hi from experience once the dough is stiff it gives a preview to the final product when baked…I’m still hoping for the best for you! If you have cling wrap please cover your dough in cling wrap! It’s going to make for faster rising of your dough! Also if you have a microwave(most people choose not to have one) if you have one put it on for one minute after the minute is up put your dough in there to rise/relax last tip when putting your bake in the oven place it on the upper rack & put a baking pan/dish of water beneath it that will help to reduce the bake from becoming to firm/hard during baking I hope all my tips helps! Be sure to let me know how it turns out! Thank you for watching & your comment 🙂
