Hi, I blended dried coconuts to get the coconut milk, and added some coconut milk powder in the recipe. However, I have tried the recipe with coconut milk mixed from coconut milk powder and it was just as delicious and soft. When doing so, I just add a bit extra coconut milk powder to make the flavor stronger. Enjoy 😉
I am not sure. If you do try it, soak the dessicated coconut in the coconut milk, same recipe measurements, to rehydrate it. Let me know how it goes. 😊
I'm not saying this bake ain't go come out good but I split the recipe in half and pressure the liquid was way too much for the flour and I had to keep adding flour lol but I'll try it again with the full recipe
Hi Erica, I can't understand why you are not more popular! Your recipes, tips and tricks are divine! Listen, my only problem with this recipe is all of the "proofing" and resting that is necessary. I am going to use your ingredients and your directions but after that first knead, I am going to set up those bakes in the baking pan. I will let it "soak" for 30-45 minutes while I make saltfish buljol, then I will poke them with the fork and bake them. Hope that works for me! 🙏🙏🙏🙏🙏🙏🙏🙏🙏 Will let you know how it goes... I am looking for something quick and easy to make on a Saturday or Friday evening that's not too labour intensive and is executed quickly. Thank you so much for posting videos. What will be on your Christmas table this year? Would love if you shared your menu and prep work with viewers.

Erica, I did too many alterations to my recipe. Used different types of flour (3 cups whole wheat, 2 AP, 1 Cracked wheat) and girl... Mayday! Mayday! What a mess! We are diabetics and we can't be eating all of that white flour. I need to fix my raising agents and thank you for that added tip of leaving it to rise in the oven. Thank you for sharing your methodology and recipe which is flawless. I appreciate it and I will tinker with mine to suit my dietary needs. God bless you, dear!

Hi, you can try proofing the yeast before you add it to make sure the dough rises.
Yeast was probably dead...
If you proof the yeast before and it doesn't froth within 5-10 mins.., it's definitely dead. Buy fresh yeast and try... Red Star Brand... Good luck!
