Moist and Delicious Carrot Cake Cupcakes with Cream Cheese Frosting | Quick and Easy Recipe

Moist, fluffy and very delicious carrot cake cupcakes with cream cheese frosting/icing. Quick and easy recipe!
Ingredients:
4 eggs
330g raw or white sugar
250ml (1 cup) neutral oil (I used sunflower oil)
3 medium carrots, grated
150g (1 cup) wholemeal flour
150g (1 cup) flour
2 tsp ground cinnamon
1 tsp mixed spice
1/4 tsp salt
2 tsp baking soda
1 tbsp orange juice
1/2 cup chopped walnuts (optional)
Cream Cheese Icing/Frosting
- 300g cream cheese
- 100g soft butter
- 50g icing sugar
To decorate:
- chopped dried apricots
- pumpkin seeds
- chopped walnuts
- orange zest
Bake in the oven 160°C/325°F fanbake for 25 - 30 min.
