These look yummy! When my son was little, I used to make him a "Mello Pizza". (Mello is my nickname lol) I placed pepperoni slices on a plate, put a dab of pizza sauce on each slice and then covered them all with whatever shredded cheese we had in the fridge and microwaved it for 30-60 seconds. You have to eat it with a fork, but he is almost 24 now and it is still one of his favorite snacks :)

I do that with cheddar cheese and bacon and Jalapeños sliced and then pop them in the oven and they’re really good on a cheeseburger
I am loving these recipes! I’m disabled and looking for stuff that is super easy, can go in the air fryer or crock pot, low carb, and short prep time, because I can’t stand up for long periods. And these are great to use up cheese.

Since watching I’ve start to do what you do,small pizza are expensive so I toast my bread and do pizza squares,I just use bread as pizza pastry and I can do any topping I like

Your talent learned in childhood for making stuff to eat out of what's on hand is really showcased here! I'm not the most creative person, and I would definitely never think of these. My most creative snack as a kid was putting a slice of "plastic" cheese on a slice of white bread in imitation of the bread and cheese Heidi's grandfather served her in the book (long before I knew about good, sturdy whole wheat bread and natural cheese 🤣).

My fave low carb easy pizza snack is pressing pepperoni into a mini muffin tin (one per cup), a dab of sauce, toppings of your choice - diced onion, olives etc, just don’t overload, cheese on top. Bake at 375 for about 15mins until the pepperonis get crisp. Wait a couple mins before popping out and voila you have pepperoni pizza cups!
I am going to try those egg white bites since I definitely have egg whites left over. also, you have me hooked on instant mashed potatoes and beans. I stir fry the beans with veg and seasonings and voile a cheap dinner for one! thanks for all the inspo for a broke gal in california!

Can I suggest you bake the pepperoni first by itself ona raised rack? All the grease melts away and concentrates the spices. The chips then harden up as they cool. They can be stored for a couple of days in the fridge. So yummy!
Put pepperoni on microwave safe plate put cheese and seasoning on top microwave till cheese melts - no need to heat house in summer-
