Yes, chuck roast works well! If you never had it, let it brine for 4 days, at least, to get the full experience. Then for the gravy, use the leftover brine to taste. It's so good, you'll like it! :)
I am so sorry about your friend. I do know it depends on where you get your pork. I buy organic and/or local farm raised, non-gmo fed hogs. It is delicious.
