I have known many people who overcomplicate German food and it doesn't need to be complicated at all! You can marinate your but you don't have to fiddle around with half cooked and half not cooked potatoes for the dumplings these are the easiest recipes I've ever seen and I thicken my gravy with pounded Ginger snaps for a wonderful flavor!
Not really, because there are different types of dumplings. If it is half cooked and half raw potatoes, this is a dumpling dough called "half and half" and comes from the Franconian region in Germany.There are dumplings made from only raw potatoes, which are then "raw dumplings". There are dumplings made from only cooked potatoes, these are then called "silk dumplings". The dumplings are fluffiest when they have cubes of white bread roasted in butter in the center of the dough. These are the main dumplings, there are others and not every dumpling tastes good with every dish. The same goes for Sauerbraten, which is cooked differently here in every region. However, if you want the Sauerbraten to be tender and soft, it must be stored in a broth in the refrigerator for a week (Translated with DeepL).
Overcomplicate is a very key word to most of the recipes for Sauerbraten that I have seen on here. My great grandmother was from Ulm and her recipe was quite a bit simpler.

Very authentic, kind of a "middle of the road" recipe that people from all corners of Germany could agree on, I'm certain. Try adding some black currant jam to your red cabbage next time. I'm sure you'll love it!

The meal looks wonderful! We just had sauerbraten tonight but I learned some tips and seasonings from you. I had spatzle because I didn't know about potato dumplings. My husband's favorite meal because his mother is from Germany.
I've had several different kinds of saurbraten. This one will definitely be pretty sour. My favorite recipe comes from Maders German restaurant in Milwaukee. They have 2 versions. My favorite is made with finely ground gingersnaps to thicken the gravy. Its fantastic.

The old world restaurant is still open for business on old world 3rd street. Very good food but expensive. We go at lunch as more affordable.
After watching the intro, which includes some typical stereotypes about Germany, me as a German was quite surprised that your recipe for Sauerbraten was nearly completly authentic. But: I would recommend to boil the marinade (wine, vinegar and water) together with the vegetabeles and spices for about 10 minutes. After that, let it cool down to room temperature and only then add the meat to marinate it for about 5 to 7 days in the fridge, while you have to turn it once every day. Best regards
In America I use a sirloin tip roast not a tri-tip they are two different things. A sirloin tip roast is fairly inexpensive especially if you can get it from a butcher which they all carry it.
It tastes even better when you cook the marinade for a short time, also it is easier to put the meat with the marinade in a freezer bag. And please please use different music.

Why? Dumplings are meant to be served warm from a pot of water and smothered in sauce. Now, for leftovers, we would cut the dumplings into slices and brown them in butter. Fried dumplings in butter go great with Schweinebraten.
Your recipe should have used essig essenz for a more authentic flavour. Before ebay where you can now buy virtutually anything, this powerful white vinegar wasn't available in uk. Found a helpful pharmacist who would make up a very strong solution of this from some crystals which he informed me was used in a higher concentration to burn off verrucas and the like, to be treated with caution was his advice. Anyway it pleased my mother that she could now make this authentic recipe.
