    We tried Detroit style pizza in Detroit, hopefully this was authentic Detroit pizza….Let us know if it was!

      This looks exactly like my homemade Detroit style (the first place you went to). The only thing is that I don't have easy access to Wisconsin "Brick" cheese, which is I believe the traditional cheese for Detroit-style pizza. Instead I use a 50/50 blend of mozzarella and muenster. It's still absolutely delicious. That cheese crown is the best part, lol.
      The secret of the dough is high hydration, at least 70% (I usually go for 75%). That's what makes it super fluffy and airy instead of chewy and dense.

      I used to be a chef in Boston. You guys are missing out on the East coast. Connecticut for pizza and Maine for lobster. Watch Mark Weins tour of New Haven and Maine for the lobster

      it's starting to catch on. we have 3-4 spots here in oakland california. I went out to detroit last summer and had it at loui's -- reminded me of eating pizza as a kid in the early 90s.

      Definitely my favorite, and I'm not biased. From Louisiana, where we have no regional pizza style... which honestly surprises me because New Orleans has a lot of Italians.

      As a Chicagoan i think it’s the best pan/thick pizza. And it’s all over the country (in Chicago not counting jets theirs like 20 spots now)

      I agree but there is something extraordinarily special about New Haven pizza that makes it the clear number 1 here. Honestly can’t believe it only received 6% of the casted votes.

      @@thebritstry The Detroit style pizza place where I live offers an ''8 corner pizza' which is just 2 square pizzas cut into 4 pieces each, and then put side by side so every single piece is a corner. The edge is by far one of the big selling points of the pizza.

    I grew up in Tennessee in the ‘70s, when pizza wasn’t easily available in any form. My dad lived in Detroit as a kid in the ‘50s, before moving back to Tennessee. When I was a kid he would always talk about the pizza he had when he was a kid “up north.” I lived in New York and New Jersey in my 20s and 30s and never experienced the pizza he described. I was in Detroit a few years ago and finally realized what he was talking about. Really exceptionally good pizza.

      @@johnnyslokes2712 not true downtown is one of the safest downtowns in America. It’s more of the outskirts that are dangerous.

      @user-yg1jd6dt1b There's have Downtown, parts of corktown and Greek town. Go 2 or 3 blocks in any of the wrong directions and now it's Sketchy. You dont want to explore Detroit. Stay downtown because that's mostly all there is to offer
      I have season tickets to the Lions, I'm there every weekend. You don't want to go unless you have to

      @@thebritstry While Jets is really good, it is a national chain and has hundreds of locations across the US. It's the McDonald's of detroit style pizza, lol. You did good eating at the local restaurants. Don't sully it by capping it off with a chain restaurant.

    Living here in Detroit all my life, I am very proud to have anyone to come and try the food here. Detroit style pizza is finally getting recognized for how really good it is. Those of us who live here or lived here have known how good the pizza is here. Glad everyone is enjoying this gem as well. I recommended trying other food here as well Detroit is very diverse in different cultures of food.

    A bit of sports history behind the name of that first restaurant, as well: the corner of Michigan and Trumbull is where Tiger Stadium used to be before the baseball team built and moved to the new Comerica Park. Ernie Harwell, the longtime radio voice of the Tigers, would welcome listeners to each home game "at the corner of Michigan and Trumbull." Just about every Michigander who was around before the move knows that phrase quite well!

    Thanks for coming to Detroit! We definitely take our pizza seriously.
    As a former Buddy's pizza maker/trainer, that awesome crust comes from the dough being stretched in the pan with oil. When it goes through the oven the crust is essentially getting fried, giving that delicious crispy cheese along the edge, and the color/texture on the bottom.
    On that note, this was not Buddy's best showing, it should have been deeper. You have to prep dough in pans early so it has time to warm and rise. From the sag in the middle I'd guess that dough was prepped later in the day and didn't have enough time to rise after the second stretch, or prepped early and stuck in a cooler with the same result. Bit of a bummer, but I'm glad you both got to check out Detroit style!

      I agree I was born in 1959 and Buddy's has been a family tradition. It looks like a way too slender pizza, you are correct in noticing this. But, I still could eat a whole eight-piece by myself, so I must resist. The one they picked is one of those places that mix up the original Detroit-style pizza to make it more gourmet. It was not a good representative of Detroit style. And the second one, who ever heard of that place. Shields Pizza was always a good second, and another good one that had been around for so many years I just read closed....but a shout out to Louie's in Ferndale they had great Detroit style and authenticity of old-style Italian restaurants.

      @@comadose25 you being a buddy’s pizza maker I’m shocked you had not heard of Loui’s. It sets the standard for Detroit style pizza. Maybe the buddy’s folks don’t like to mention it, lol.
      It’s actually in hazel park. Como’s is in ferndale.

      You don't have to use a knife and fork with deep dish, it's just easier when it's really hot. I've picked up a loaded Malnati's slice and eaten by hand.

      you should have a knife and fork for a Chicago deep dish.... BUT, honestly we dont eat deep dish that often, its more special occasions. we also have great thin crust (not floppy) pizza, and thick crust pizza closer to Detroit style that we eat more regularly. I do prefer Chicago pizza, but I find Detroit style a close second. im not a fan of New York style personally.

    born in Swindon, England. Moved to Detroit area in 1981. Buddys is the original, but when he opened he had a partner Louie, they split up and Louie started his own pizza joint in Warren called Louies Pizza, That's the best Detroit style that you should have tried. The thing about the Detroit style that I like is that the crust tastes like a toasted Crumpet. Good luck on your travels

      Actually, Buddy's partner was Gus Guerra who opened Cloverleaf in Eastpointe with the same (i.e. HIS) recipe. Disclaimer: I've never eaten at the original Buddy's; I go to Cloverleaf). Loui (no e) was never a partner; he was an employee.

    I'm from Detroit... and I'm getting older, every day! When I was in Grade School, maybe in the late 1950's or early 1960's, I went to school with another boy, whose father (and Grandfather) were the original Founders of Buddy's! I have loved Buddy's pizza, my whole life... I don't think that will ever change... but I do also love the place at Michigan and Trumble, and a few others. Over the years, everyone (even the national chains that service the Detroit communities) off a pizza in the "Detroit Style."

    Detroit style is my favorite style of pizza. Its deceiving. I love that I don't feel like I'm stuffed after eating it. It's airy and not so compacted.

    I’m from Chicago so there’s a special place in my heart for deep dish. Make no mistake though, there are good pizzas in all of the regional varieties, and Detroit style is fantastic. Good dough and fresh ingredients is the common denominator.

    I have family who live in Detroit and I have tried Detroit style pizza. My uncle and his sons (who worked for General Motors and Ford) says that on a full pepperoni pizza, has two red stripes that run parallel to each other indicative of the Ford VS. Ferrari race at LeMans.

    They went to the Buddies tourist location. The key to Buddies pizza is the cast iron pans they have been using since the 40s. Cast iron pans get seasoned the more you use them adding a deep favor. That location doesn't have the original cast iron pans. It opened in 2016. Locals go to The Original Conant location in the hood for a Buddies pizza.

    The Detroit pizza look delectable, quality, and cruchy. It actually reminds me of the Pizza Hut's franchise when their pizza use to be succulent. However- I immensely like your British infectious cogenial accents and authentic analysis of the foods. Your opposite perspectives are complimentary of your online camera chemistry.

    Thank you for coming to Detroit and trying our pizza. I really wish more people would give Detroit and our food scene the chance it deserves. There truly are some world class offerings here to enjoy if you know where to look.
    Also the corners are always the first part gone from the pizza for a reason, gotta have all that extra crispy cheesy lace.

    This is my favorite style of pizza. The way they get the bottom crispy is they put oil in the pan, so it's basically fried bread. Just a little vocab note - we call the whole thing the crust, not just the edges, that goes for any type of pie. Also the cheese isn't burnt, it's caramelized.

    So yes, the classic Detroit style pizza typically comes topped with two stripes of tomato sauce to pay homage to Fords victory at Le Mans in 66’ to resemble the stripes on the Ford GT40.

      I live in Detroit recently visited Austin TX and they have bout 6 pizza places called via313 pizza and it is legit Detroit style

      Don’t be jealous, Detroit is probably one of the cheapest vacations you could visit for a couple of days. Try our food, check out some of the local breweries if you’re into that sort of thing and check out downtown or the museums.
      Then of course try the pizza, Buddy’s or Cloverleaf. Buddy’s was the original that made it famous, Cloverleaf was started by the guy who made Buddy’s famous. He sold the original location downtown along with the recipe, then he moved just outside the city where he opened up another bar and pizzeria. He used the same recipe for Cloverleaf, but changed the names to avoid legal troubles and his family still owns and operates it. My favorite at Buddy’s is their “Margherita” which they also have at Cloverleaf where they call it “Bruschetta.”
      If I’m staying home, I get delivery from Jet’s pizza because their sauce is amazing. Their hand tossed round pizzas are great, but something magical happens in those square trays with their deep dish that’s amazing.
      Also, you should check out some Coney Dogs while you’re in town. They’re another Detroit original, and the best two places are literally next door to one another. The first one is called American Coney Island and next door is Lafayette.
      There are decent coney restaurants all over Metro Detroit, but the original two places have a particular vibe and history.
      I’ll throw out an honorable mention for the third Detroit original dish that was invented by an absolute mad lad/culinary genius. That would be our Corned Beef Egg rolls. There’s lots of places that sell them, and I’m not sure which place starred it but they’re amazing. I also recommend the egg rolls with Pastrami as well. They sometimes serve them with sweet and sour sauce or duck sauce, but I prefer more mayo based condiments.
      We also have amazing Polish food in Hamtramck as well as the best Mediterranean food in Dearborn.
      Detroit gets a bad rap from people who don’t live here, but folks are all extremely friendly and we’re spoiled for having some of the best food in the Midwest.

    Pie Sci is the science of pizza, not a play on Sci-Fi. They even have a Science Lab, which features weekly experiments in pizza.

    Told yah :-) Buddy's looks to have the most legit pepperoni of the three. When cooked properly it deforms into a "cup" with fatty pepperoni oil pooling in the "cup" and crispy perimeter.

      Its cup and char pepperoni not so much that its cooked right its that its a different kind of pepperoni. You can buy it and put it on a microwaveable pizza and it will still cup. I have had some that wasn't so good before though that tasted more like salami that cup and char pepperoni.

      That’s the pretty standard method of eating all but the deep-dish Chicago pizza everywhere here in the US. We can always clock a tourist when observing someone go for the flatware while preparing to devour a slice! 😂

    Detroit is my home town. Glad you enjoyed the visit. I enjoyed watching you. BTW Detroit style adds brick cheese (origins from Wisconsin) and that is what browns so nicely along the edge. Like Andrew, the burnt sides are my favorite part.
    BTW: I recommended your YT channel to the "BLANKS No One Asked For". They asked for YT channel recommendations they can collaborate with. Since they are a bunch of guys in North Carolina trying UK foods and snacks and you are Brits trying US foods, I figured it would be a good match.

    “Detroit style” is also Sicilian style just like my Nona and all of her sister in laws used to make. You spread a light layer of olive oil on the pan to get the crispy base.

    Thanks for your visit. You had some great choices but missed the best. The cook that brought the deep dish pizza to Buddy's and Shield's pizza bars. Louie's in Hazel Park. Buddy's is good pizza though.

    The problem is that Detroit style was reinvented, I'm 66 years old, and the first was founded even before that. Most places were invented for the lunch pail, so square was best, when I was a kid we used to go to The Cloverlief Italian style restaurant. During the day men working at FORD could get a slice wrapped in a piece of tin foil. The did it closer to normal style, another words; dough, sauce, pepperoni, olives, onions, and cheese to the edge. The edge being the best part, by being on a hot assembly line meant your slice was going to be hot. Even in the dead of winter, you would know what I meant just standing on an assembly line for a moment. Good or bad thing was there weren't many mom and pop pizza shops yet, so going home on your payday you could take your family out, and it didn't have to be pizza. 😊

    If you are going to New York City, you should also check out New Haven, Connecticut, if you have the time, as they have been often rated as the top pizza despite being in a smaller city. The two big names there are Frank Pepe's and Sally's. Love your takes on food in the US!

    Then come to Maine in the summer and buy a ticket to Cabbage Island for the lobster feast. I think it's $55 per person which includes the boat ride to the island. Mark Weins and Sunny from Best food review show

    Detroit area resident here. Detroit Style is more like a Fruit Pie thickness whereas Chicago Deep Dish is more like Birthday Cake thickness. Chicago also has a very thin style called Tavern Style. Yes, Buddy's is the original, but I don't think they are the best. Michigan and Trumbell is named after the intersection where the old Tiger Stadium (where the major league baseball team The Detroit Tigers used to play) was located. It is Much better than Buddy's. Pie Sci and many other places (such as Jets Pizza) have the "Detroit Style" crust, but then a more "traditional" top with the sauce then mozzarella cheese then toppings. It's good, but not "real" Detroit Style. Detroit Style pizzas that also are better than Buddy's can be found just north of Detroit in nearby cities Hazel Park (Loui's Pizza,) and Royal Oak (Palazzo Di Pizza.)       Buddy's quality isn't what it used to be. Apparently the business was sold to a private equity group in 2019 and I can tell the difference since then.

    Very much a fan of Detroit style.I love Deep Dish and it has it's place, but I can eat Detroit Style every day while Deep Dish feels like its a once every other month or so kinda pizza.

    Detroit is my personal favorite. Chicago is a bit too much and New York is a bit too little (dough and cheese wise). Online it seems most people prefer new york style due to thin and crispy, but I just love a bit of a thicker soft dough that detroit nails without overdoing it!
    Also weirdly enough detroit style reminds me of 1990s pizza hut (which is a good thing)😂

    The dark bit of crust on your Chicago pizza was burned crust, the dark bit around the top of the edge of a Detroit style pizza is intentional and isn't burnt dough but burnt cheddar cheese aka cheese swill and is delicious and what makes a Detroit pizza a Detroit pizza and not just another Sicilian/grandma pie.

      The crust on the Detroit-style “Sicilian” squares looks much thinner and crispier than on the average square. I must admit I prefer a thin, crispy crust which is why I rarely have a Sicilian slice here in NYC, I find the square crust is usually too thick and bready for me personally.

      No the Chicago pequods crispy part is also cheese (not crust)...when they make pequods pizza they specifically put cheese on the edges so it creates this crispy cheese...no doubt visually it looks burnt but it does not taste burnt...it tastes like chewy crispy cheesy goodness.

    I love the story behind Detroit pizza. It's so distinct from New York and Chicago. My winner is Chicago pizza. The herbs are perfect, the sauce is thick ad spicy and the longer cooking time gives the flavors time to meld together beautifully. Giordano's is THE place. My mother and father in law own Renaissance Faires and we'd absolutely take over the place after a long day and hoover the pizza. Hunger is the best sauce, but nothing will ever be a better pizza to me.

    I don’t know about the shape of the pan in Detroit. Here in NYC the thick, square pizza is known as “Sicilian” and the round pies are “Neapolitan” or “regular.” Fun fact; the “white” pizza was named “Margarita” after an Italian noblewoman who preferred a sauceless slice that was prepared especially for her in Naples.

      Well, in Detroit “Margherita” pizza has red sauce, with tomato, basil and mozzarella. So, we obviously do our own thing-hence the reason we don’t call it Sicilian.

    Detroit Pizza is probably descended from a type of Sicilian Pizza which was very bready and rectangular.It was called sfinciuni,and I have no idea how to pronounce that.lol.Alot of commercial American pizzas use Asiago,which is a very pungent cheese compared to mozzarella.Mozzarella has a nice milky taste when fresh.

      Born and raised in Detroit and I'm 62. I've never heard of our pizza called deep dish. We've just said that it's square pizza.

    A big difference between Detroit and Chicago styles is that with Chicago, the crust (bread) is more toasted. With Detroit style, the cheese goes all the way to the edge to keep the crust "doughy", and the cheese gets carmelized instead.

    I'm from Michigan and I do love Detroit style pizza. The ones you tried look awesome! The best chain for that style is Jet's in my opinion.     Born and raised in Michigan. Detroit style pizza is by far my favorite. I would never put peppers on it though. I imagine that would be directly counter to the flavor profile I am looking for in a Detroit style pizza. You need. The slight sweetness of the sauce to shine through.

    there are several versions on the origins of Detroit style pizza, the story that makes the most sense to me is a guy named Louis Tourtois was the chef at the original Buddy's in Detroit 1954-1970, Gus Guerra was the owner, not the chef. Louie left Buddy's and started Sheild's Pizza out of the original Sheilds bar in Detroit. in 1977 a disagreement with partners and Louie leaves Sheilds to open his own place in Hazel Park Michigan, Louie's Pizza. i consider Louie the Godfather of Detroit style pizza, he was the chef and driving force at all 3 of the OG Detroit style pizza places decades before it was called Detroit style and it was popular nationwide. Loui's to this day is still the best of the 3 OG Detroit style pizza places. its a shame that he doesnt get the credit he is due now that he is gone.

    Other than a few years, I've lived my life in Detroit. In other cities, around the country, I've tried pizza. Deep dish pepperoni in Detroit is my favorite. Pizza, in Oklahoma is like eating cheese, and pepperoni on a cracker.

    I live in Chicago and I eat Detroit style pizza a lot. I might eat Detroit style pizza once every 2 or 3 weeks. I usually eat 1 Chicago Deep Dish pizza each year. Anyone that lives in or around Chicago always says Tavern Style pizza is the way to go and what we usually eat over here. Deep dish is usually what tourists get when they come to Chicago because it is different

    The charred edge of Detroit style pizza is AMAZING! It doesn't just add flavor, it adds a complimentary crunch that's not too strong (when done right) which pairs phenomenally well with each bite. The dough, however, is where anyone can make the biggest difference in pizza. Fast food pizza places use the same bland dough from the same distributors. I started cooking pizza from scratch about 7 years ago, and corrected this crime against pizza. Just put together a savory herb oil (I take ¼tsp of 5 different herbs, mix them with vegetable oil (olive oil works best) and mix about 2tsp directly into the dough. When it's time to let the dough rise, I grab a brush and coat the outer surface of it with that same herb oil. This makes for delicious breadsticks as well, in which case you can just throw it in the oven at this point, and when it's done you take it out and give the bread another light coating of herb oil, and let it cool off before eating. Do this and you'll already outdo every global, national, regional, and many local pizza chain restaurants.

    The crispy edge you mention is technically fried cheese. This means edge pieces are the best and if a corner is available, double the deliciousness!!

    From here checks out detroit style is the best by far. Dont get me wrong i love ny n chicago style to. But if i can only have 1 for the rest of my life utll be detroit style

    We live in the Detroit suburbs and our favorite Detroit pizza brand is Buddy’s. Our favorite New York pizza is Grimaldi’s if you come across them there. Good eating and safe travels!

    All pizza is good, Detroit deep dish is best. Glad you liked it! Now have one with BBQ sauce, chicken, bacon, and onion. Amazing hot or cold.

    I was born and raise in the Detroit area and I used to work a couple miles from the original Buddy's location. We went there for lunch a couple times a week. I have been to all three of the places you visited and enjoyed them all. Buddy's is my personal favorite, partially because I had so many fun times there. So happy to see you visit Detroit and get a taste of what I think is the best pizza in the country.
