I Louisiana, USA, they eat chitterlings (pig intestines), beef tongue & brain. And a dish, that my grandmother called “sweets and lights” which is a pork dish made with the heart, lungs, kidneys, and liver mixed with a little meat and a gravy sauce served over rice.
in latinamerica we eat all the part of animals basically, cow tongue stew is really good, mexican has tacos de carnitas with beef tongue. we make soup of anything animal really, ive seen even calf or bull dick soup but those are delicatessen thing.
