You can use "store bought" ground turkey or grind turkey yourself
You're freakin' hilarious! I am searching the internet on how to make homemade jerky for my dog and I come across you! What a pleasant little surprise! :)
You can use a dehydrator and dehydrate it for 10 hours or so and it will be ok. You don't NEED a cure (or in other words, salt) but you do NEED to put the heat at 160 or above.
If no cure is added though you need to treat it like regular cooked meat.
What happens if you don't let it marinate in the fridge overnight? I'm in a hurry usually.
Do you use ground turkey from the meat dept, or can you take a full real turkey meat and grind it down, to get the same
I read on the Nesco site that you should cook poultry meat in the oven at 160 for 30 minutes before dehydrating. Is that necessary? I just made some ground turkey sticks but didn't cook it in the oven, nor did I add cure to it since I don't have any on hand. I just marinated it overnight and stuck it on the dehydrator; however, I'm now worried that it's not safe to eat. Any words of wisdom?
Looks good. My problem is I don't think.... No, I am absolutely certain that I could not stay out of it until the whole batch was gone!
I suspect that it contains all types of preservatives.

I'm not an expert but if you didn't heat it to 160 , AND didn't put in a cure, you didn't make jerky and I wouldn't eat it no matter what.
