Yes please - more single serve meals. I have a crockpot the same size as the one you are gifting to your brother-in-law and your rice cooker and steamer basket. I also have a tiny "warmer" I keep at work. I say warmer because the instructions say you can't use it as a cooker (in big bold letters LOL). I know the leftovers from these recipes would heat up great though. Especially if I "cheat" and use breaded chicken fingers for the first recipe. I could bring it to work in a container and have a great hot lunch by Noon. ❤❤

Love this! We have a 1 1/2 quart slow cooker. I do something similar with a regular bone-in chicken breast half. I put baby carrots and cut potatoes in the bottom add olive oil, and sprinkle salt, pepper and garlic on them and stir together. Oil and season the breast with the same and put it in with the veg. I usually fill the sides with lots of veg. Sometimes the breast is so long I have to break the breast to fold it in so the lid will settle. Low for less than 4 hours and it's good for the two of us. I also put an old t-shirt around the lid edge to stop the steam from getting out so it cooks faster. Would love tiny slow cooker breakfast ideas, too! Thanks!

I bought that exact same mini crockpot from Amazon and I love it… My first dish it was pumpkin pudding. Also I’ve made a pot roast in it but I used dill to season it and when it was done, I put sour cream on it…it was excellent. Yes, more meals for one or two would be great. (I’m actually gifting one of these to my little sister for Christmas, but hers is decorated with minions all over it which she loves.)
First time visit to your channel. I am a widow and older and have that little crockpot. There are wonderful cookbooks for these mini crockpot cookers too. I recently made split pea soup that was delicious.
I love my little slow cookers! I've had a Rival Little Dipper for years, and love it for warm cheesy dip, but from day to day I get a lot more use with it cooking dried beans.That model has only just enough room to cook 3/4 cup of well soaked dried beans. Perfect when I want just a can of beans as a recipe add in. I've also got another small slow cooker that seems to be just a bit larger than the Rival, it's a My Mini with a removable crock, and it's handy to have two for batch prep. The price is low, and it's marketed as a pot for chocolate fondue, but it seems to work just fine as a regular slow cooker. Just recently got a Casserole Crockpot, 2.5 quarts, in blue and white. Looking forward to seeing what I can do with it, it's a much handier size and shape for sharing at a potluck.
The corn casserole would be delicious paired with the meatloaf. Saving these for sure. Most likely I will double up and putbin my regular crockpot for meal preps. Tfs

Love my old crockpot. I think I've had four different ones over the years, and I'm now 70. The last two were purchased at thrift stores. I do live alone as a senior now and have one crockpot left. Not sure I'd buy a cooker just for one, since I love making a pot of chili or several other casserole type things and freezing the leftovers. (One of my smartest purchases has been a small box freezer, and I think I only paid $139 for it a couple years ago). Re the old crockpots, they can run hotter and can crack. I thank God I was home when I heard a loud crack, and sure enough, it was my crockpot that I had plugged in about a half hour prior; it cracked into two big pieces. I was able to rescue my ingredients and of course had to pitch the pot. I also love using a crockpot for desserts like hot fudge cake or chunky applesauce from the Fix It and Forget It Cookbook. You can probably hit your library, local thrift stores or online at Abebooks for many of these.

Definitely need to try some crockpot meals for one. It’s just me and my husband. He’s been pretty sick for a while and hardly eats. When he does eat it’s usually cereal, French toast or eggs. I try to cook things for myself that I can divide and put individual servings in the freezer. Of course there’s baked potatoes, a salad or grilled cheese for an easy meal. Would be nice to just have a single home cooked meal from the crockpot.
Love this! I have a 1.5 qt and a 3.5 qt. In the small one I make chili, turkey meatloaf much like yours and potato casseroles. In the larger one, I cook enough chicken breast for several days or small batches of soup that I freeze and smallish, full sized pot roasts. I like to buy turkey tenderloins when they are on sale and make them in the crockpot with seasonings and a few cups of water, so I get some turkey broth too. I usually make more than one serving because I don't mind leftovers, and I don't have to cook everyday then just for myself. All of your recipes look good, and I'd love to see more.

Just used a 2 quart slow cooker for the first time. I live alone and this size is perfect ! The Walmart brand cost 9.99 and very well worth it ! Thanks for these wonderful recipes. Merry Christmas. 🎄
Rich Brown steak dinner Spray interior of slow cooker (I use 1.5 qt) place any tougher cut of meat such as cube steak round steak etc. ( enpugh for 2 people anout 1/2 pound) Season meat with pepper and other seasoning of choice) Cut into serving size pieces Put in bottom of cooker Peel and thinly slice a sm/med onion and ring it on top of the meat. Or more if you really like onions Peel and halve potatoes place on top of meat (I use 1 lg or 2 small) Peel carrots and cut into larger pieces 2" ea Pour 1 can (I use a half and freeze the rest)of no salt added cream of mushroom soup or 2 if you are making for more than 4-6 people Then what makes this is put (1)-2 Bay leaves on top nestled into the soup. Cook on low 6-8 hours depending on your cooker. Mine cooks a little fast so unless my meat was frozen Iit is usually done in 5ish hrs It is very tender and full of flavor. A family favorite! Enjoy

It would make a great gift to kids going off to college, etc. I bet your brother would like a copy, too. Just collect your recipes for single or two servings and self or regular publish it. Thank you for these recipes! I eat with my daughter and grandkids around three nights a week (days I watch them) so other days for myself. I will usually cook 1/2 of a ground beef or ground turkey roll to use in a couple of meals. Can of chili ready beans, some ground beef, small can of tomato sauce, either a can of diced tomatoes or can of water and seasonings. Makes a couple of meals.
Will be looking at Aldi for that pot roast. I actually make turkey meatloaf just for sandwiches. I like to let it sit in the fridge overnight and eat it the next day, so this will be great - enough for a meal with salad and a frozen veg then a big sandwich (with mustard) the next day!! And, I agree about adding mustard - it totally makes the meatloaf.. I will give the chicken soup a try too. I would have to use an oven for the corn casserole as it looks too moist for me (I have a texture "thing" for some foods). Love your channel.
Yes please, like a lot of older folks,I too live alone. And while making some recipes that you can eat for a week. I would love to just make an assortment of one meal dishes. The thing about crock pot cooking is you can tweak any basic recipe as you go. For instance, I brought a pot roast kit from Walmart. After removing a pound of fat!!! ( And still had enough for flavor) after four hours it looked a bit sad at the bottom of my crock. So I added two cups of hot water with two oxo cubes crushed into it and two tablespoons of bisto gravy mixed in. Then added a bag of heated broccoli florets and a bag of heated mixed veggies. Yes it made meals for four days but it was so good. The only thing I added to each serving was a little salt and pepper.
This is exactly the same way I cook! I usually don’t follow recipes, I just add big scoops of garlic to things and whatnot. So versatile for those of us who like to experiment!
Yes more single serve meals.... PS. What did you do witĥ sauce from pot roast..save...good for gravy later.....2nd meal witĥ mashed potatoes and veggie....

I have a Lunch Crock ‘warmer’ and I have cooked diced meats (boneless chicken and pork) with non-root veggies and it worked very well. 😊
I totally use the warmer to cook meat too you just have to use your judgement and a thermometer lol!

I have a vintage crock pot I use sometimes with my vintage Crock Pot cookbook! Love it! But I will be careful about the cracking lol

Rice cookers only cook for like 20 minutes, then it holds warm. Just buy a small crockpot. It's probably on sale.

@@ClaireRisper Will keep an eye out for it, as there are a lot of single people and elderly that end up with lots of leftovers. You can only freeze so much. It would make a great gift to kids going off to college, etc. I bet your brother would like a copy, too. Just collect your recipes for single or two servings and self or regular publish it. There is a market for this. Keep on cooking! 😀👍👏🏼💕
Thank you for these recipes! I eat with my daughter and grandkids around three nights a week (days I watch them) so other days for myself. I will usually cook 1/2 of a ground beef or ground turkey roll to use in a couple of meals. Can of chili ready beans, some ground beef, small can of tomato sauce, either a can of diced tomatoes or can of water and seasonings. Makes a couple of meals.

Will be looking at Aldi for that pot roast. I actually make turkey meatloaf just for sandwiches. I like to let it sit in the fridge overnight and eat it the next day, so this will be great - enough for a meal with salad and a frozen veg then a big sandwich (with mustard) the next day!! And, I agree about adding mustard - it totally makes the meatloaf.. I will give the chicken soup a try too. I would have to use an oven for the corn casserole as it looks too moist for me (I have a texture "thing" for some foods). Love your channel.

Yes please, like a lot of older folks,I too live alone. And while making some recipes that you can eat for a week. I would love to just make an assortment of one meal dishes.
The thing about crock pot cooking is you can tweak any basic recipe as you go. For instance, I brought a pot roast kit from Walmart. After removing a pound of fat!!! ( And still had enough for flavor) after four hours it looked a bit sad at the bottom of my crock. So I added two cups of hot water with two oxo cubes crushed into it and two tablespoons of bisto gravy mixed in. Then added a bag of heated broccoli florets and a bag of heated mixed veggies. Yes it made meals for four days but it was so good. The only thing I added to each serving was a little salt and pepper.
This is exactly the same way I cook! I usually don’t follow recipes, I just add big scoops of garlic to things and whatnot. So versatile for those of us who like to experiment!

PS. What did you do witĥ sauce from pot roast..save...good for gravy later.....2nd meal witĥ mashed potatoes and veggie....
If I wasn't so lazy in that particular day I would absolutely make a gravy! But I didn't want to use more dishes lol :)
