Maybe the area with the toilet, where you said you would put storage shelving could be made into a inside shower area, might be better to have it inside especially with 2 little kids. Just a thought. Also, what might come in handy is an over the door shoe holder with clear pockets. Lots of storage, little space. Can't wait to see it finished.

This is a long one because I have a lot of ideas for you. ;o) I agree with someone who commented: A pop-up shower tent is a really good investment! There are several portable propane water heaters available for showers/dishes/car washing on Amazon. Put up a hook on the outside of your camper near the back so you can use the water heater for a shower and for your kitchen with a long enough hose. OR use a battery powered/charged pump submersed in a bucket {I saw a guy who used a cooler to keep his water warm. He filled it with heated water from his camp stove, then filled with cool water to the right temp. He used the submersed pump which comes with a shower type head and hose to create a shower for himself. They are WAY cheaper than the propane pumps}. Add hooks far enough apart to hang some hangers for wet clothes or towels. Maybe a corner wire shelf outside the wall of the bathroom. You can put several hangers through the wire shelving. Dollar store hanging shoe organizers are great to add to your door for organizing all kinds of stuff. 3M hooks are great, or 4 screws to hold them on! Little wire baskets or cloth bags on the wall are good for small stuff too. Jacks to hold up the patio is the best way I have seen. You may want to reinforce the center of your bed with a 2x4 "frame" mounted vertically to reduce any chance of you & the bed falling on anyone below & stop it from sagging in the middle. All big beds have legs in the middle to stop sagging. You could then use that to attach a shallow drawer or a shelf to store stuff on one side. 1 more idea is to add some "C" channel under the bed on one side to add a pull out shelf for a baby bed/changing spot. USB charged fans work for quite a while and you may want one or 2 to help circulate the air. If you can afford a Small wall mounted Maxx Air Fan it can really help move air in there and doesn't use much power, plus no worries about rain coming in since the vent is covered and angled down. A collapsible small dog pool with a drain could work great as a baby bath. I have seen people use oil changing pans for this as well. Collapsible sinks with a drain hole are great too. Josh you are as about home grown as we come!!! Maybe a Colman portable awning would come in handy pop up right over the entire porch area… A scissor jack welded onto each side of the back end will help stabilize the trailer when not hitched to truck.. keep the great content coming!!!
I did mine a couple of summers ago. I used 12v lights powered by deep cycle trolling motor battery. 30A input to power distribution box with breakers and battery charger. Fun project!

I’ve spent the last 2 years designing and building our family camper for 4. Close to finishing. But man what a rabbit hole this project brought me down. I’m a engineer so it’s not unexpected to find myself overthinking things😅. Either way, it’s going to end up near perfect for what we need. Lots of frustration along the way, but mostly it’s been an exciting project. All DC powered, except the air conditioner for when we have AC power. Good luck!
If you can make the ramp lighter and mount it with the hinge at the top of the opening instead of the bottom, you can use that as an awning. Would probably add 2 legs to the end to hold it up for set up. The ramp probably has 1/2 ply on it. You can probably remove that and replace it with luan to save some weight or just not put anything there. You also may be able to find gas struts to assist in lifting it. You probably would have to beef up the framing on the top of the opening also. That is probably what I would try to do if it were mine. Either way enjoy the journey of the build.
I took a lot of ideas from First Lite mobile trailer setup The deer hoist hitch underneath the side of the trailer is a plus when you don’t need to quarter them out in the field
Get you a mini split for your ac , then you will have heat as well and take up less room mount the compressor on the to tongue of trailer and fan on the wall. Just an idea.

I did the same thing with the slightly smaller Hallmark enclosed trailer just finished it over this summer. mine is pretty much exclusively for hardcore mobile hunting, Is and the occasional camping trip in the summer in Michigan. One good idea to keep your trailer from tipping like you had mentioned.... go to a junkyard and buy 2 scissorjacks from old vehicles, and weld them underneath the frame rails on either side. Super easy super cost-effective, and works of a Jack screws so it's pretty much bulletproof. All I do is when I unhitch I screw those down to make contact, level and done. Keep it up bro, looking forward to seeing more!
Take a car battery with you use a trouble light that has to alligator clamps on it . Works great for light without always running the generator just for a light.

Consider how you distribute the weight to ensure you keep enough tongue weight, otherwise it will not trailer well. Too much weight in the caboose (aka kitchen area) will cause it to fishtail at highway speeds

We have a portable shower that sets up outside works great with z propane water heater
Add a skylight so you can circulate fresh air in on nights where it is cool enough to not need the A/C

One more thing I forgot, use hula hoops and a shower curtain for your shower and camper will thank you. That's how I keep the water at Bay.
