Hello Nandita. I just bought your book. Very informative and helpful. I am diabetic with HBA1C 8.2. Let me see if you book will help me.
Great work first time seen such thin roti kindly try to share calories count for each recipe you share ❤
Just read an article that jowar and wheat are nutritionally comparable. But jowar is gluten free and has a lower glycemic index. Reason enough for me to make the switch. Thank you for the vid! P.S. your sari is lovely ...but i was nervous it would catch fire. Keep that pallu out of the way!!!!❤❤❤❤

Observant and caring. Be like u r : sensitive.
I made my jowar flour rotis just yesterday in boiling hot water. Only difference was I kept d aata away for 10-15 minutes after mixing to cool down n then made rotis. They were not as thin as yours n not very round in shape but extremely soft n nice.
My question is: does dusting d roti wid *wheat flour* make it easier while rolling wid sides also not tearing?
Thank you kindly for your sample of cooking roti. It looks so good.Just difficult for me without exact measurements , like grams, ml and litres and also the English names of the flour. Is it finger millet flour used? Can barley flour and finger millet be mixed together for roti
Jowar is called Sorghum in English. White Sorghum is most commonly used to make rotis.
If you wish to follow the above recipe with cup measurements:
1cup Dry Jowar Flour
1cup water
Pinch of salt
Bring the cup of water to a boil. Add a pinch of salt. Turn off the heat. Immediately add the measured jowar flour to the hot water & stir it with a stick or the narrow end of a rolling pin.
Cover the vessel & rest it for 5-10mins. This will allow the jowar flour to bloom into a dough form in the steam.
After abt 10mins take the dough out into a wide plate & start kneading it with your palm till you get a smooth pliable dough. Keep it covered with a wet napkin.
Use it immediately to roll out rotis.
Preferably use jowar flour for dusting.
Water is sprinkled on the top surface of the cooking roti to prevent it from drying out too quickly.
Freshly baked jowar rotis are best eaten with white butter & jaggery.
Hope this helps.
Can i get the link of the tawa?
