Definitely would use peanut oil next time. Also, I would suggest leaving the pot uncovered when cooking the bird. About 5 minutes per pound when cooking the chicken. This way you don't have to keep pulling it out to check.
Get your oil hotter and five your chicken a flash cook for a couple of minutes then turn your heat way down and cook till mean is up to your cooked temp. Doing this seals the chicken so it is not as greasey.
Some time try frying in Peanut oil if you don't have anyone in your family with a peanut allergy. It is really good and it doesn't seem to be as greasy. Peanut oil is a little bit more expensive, but I think it is worth it.

We have a family one we use for Turkey on Thanksgiving.
my dad dose the same thing and you can get about 10 uses with that oil and it gets better tasting every time

Only America has no laws against selling poison to its citizens as food or food grade. Use only pure peanut oil with nothing added.
