I have this exact grill... you didn't put fat cap down? Didn't trim any either? Seems to go against a lot of other videos, but yours looks GOOD! Tender juicy..... I'm going to have to take a leap of faith with this one tomorrow, looks phenomenal

You get a better flavour. In the Weber bbq you will get a char grill flavour. It will also turn out more moist.
